Just read a recipe from "Cooking Light Fresh Food Fast" for a Coconut Shrimp Soup that looked AMAZING! Searched the cookinglight site and couldn't find it. I saw the book at my local library so maybe you could look at yours. If you can't find it I can look again the next time I'm there.

Wow, I've never heard of those. Might have something to do with being in the country, by the time you got to 'next door', and so on, it might be a different meal time. =D

Rice & beans is always a good carribean style side dish. (they type of beans used depends on the island/culture) instead of beans, some use a fruit salsa made with mango, papaya and onions, oil vinegar and cilantro. the salsa is also a good accompaniment to beef, chicken and seafood.

Ooo.. that DOES sound like fun! I put "Caribbean" in the search above, hit the orange Search button, and got back a whole ton of recipes. There's a Caribbean Fudge Pie that looks absolutely WONDERFUL!

I love coconut shrimp, but any shrimp would be great. I agree that if you grill shrimp they should be raw and have their shells on, but the main thing to remember is they don't take any time at all. If you over cook any shrimp they can be tough -- I am speaking from some unfortunate experiences here. :)

Fruit kabobs would go great with the shrimp.

And don't forget the rum punch. :)

Mini shrimp kabobs. Do it w/ some spicy seasoning w/ lime. Make sure you use uncooked shrimp. If you use cooked it will be tough.

A Progressive dinner is so cool....we did this one year at school for staff development in our classroom.

I was thinking Jerk or Curry Chicken, Coconut Shrimp, and Cassava Bread.
