Thanks for the link to the article, Eemma. It was pretty interesting. Now that I have more time to cook using range and oven, I'm finding that I use the microwave less, but still think many vegetables taste better when cooked using a microwave steamer basket rather than my stove top steamer.

I found this quote on the FDA site:
"Microwave cooking does not reduce the nutritional value of foods any more than conventional cooking. In fact, foods cooked in a microwave oven may keep more of their vitamins and minerals, because microwave ovens can cook more quickly and without adding water."

This is one I hadn't heard before. When I tried to research the validity of the claim I couldn't find any of what I would call reliable sources that backed this claim so I feel pretty certain that it is another of the scary urban legends like the workman that stood too close to a malfunctioning microwave oven getting cooked. ;)

I recently heard that microwaving food destroys all or most nutritional value. Is this true?
