In place of ritz I sometimes use chicken in a biskit. Delicious.
2 16-oz. packages of frozen chopped broccoli 1 1/2 sticks of butter or margarine 2 cups of crushed Ritz crackers 1 5-oz jar of Kraft Old English Cheese Spread [edit] Steps Preheat the oven to 325 degrees. Mix the Ritz crackers and one stick of melted margarine. Set this aside for later. Empty the broccoli into a pot, fill with water, and bring to a boil. Boil the broccoli approximately six minutes, making sure it does not get too soft. Drain the broccoli well, then mix it with the 1 cup shredded Cheese and the remaining half-stick of margarine. Spread the broccoli mixture evenly into the casserole dish. Sprinkle the Ritz cracker mixture evenly over the broccoli. Bake at 325 degrees for 20 minutes.

Hi Karen, Welcome to the message boards! I have not found the recipe you were looking for in our archives. I am still working to find it but I am worried I may not find it before Thanksgiving. Here is a recipe you might try.

although i am with you kopperhead on using real cheese in most anything, in this case, it would breakdown and be too oily and grainy for casserole...

It is. But Kraft makes a cheese spread that is called Old English and it has a nice sharp cheddar flavor to it but it melts like cheese whiz.

Ang,
No....her's didn't have rice in it and I believe she used velveta cheese as well. I guess I can wing it and see what I come up with but the Old English Cheese Spread really gave it a distinctive flavor.
Thanks though. I might try your recipe though, it sounds good.

BROCCOLI CASSEROLE
3 pkgs. frozen chopped broccoli 3 c. brown rice, cooked 1 c. onions, chopped 1 c. celery, chopped 8 oz. jar Old English cheese spread 1/4 tsp. nutmeg 1 can cream of chicken soup 1/2 c. milk 1/2 c. slivered almonds
Cook rice and broccoli, set aside. Saute onions and celery. Combine cheese spread, nutmeg, chicken soup, milk and add other ingredients; rice, broccoli, onions and celery. Pour into large casserole. Sprinkle top with almonds. Bake at 350 degrees for 25 minutes. Then broil 3 minutes to brown almonds. Serves 8.

I am deperately searching for a recipe my mom used to make for the holidays every year and can't seem to find it anywhere. I was hoping someone here would be able to help me.
My mom used to make the AWESOME broccoli cassarole with Old English Cheese Spread and I believe croutons but I don't know what else was in it or how long it was cooked for. Any ideas?
