My favorite cheesecake recipe calls for 6- 8oz packages of cream cheese, which makes a very deep, and very rich cheesecake. I don't make it often, but I found I could substitute the Neufchatel cheese for a portion without tasting any difference.

Welcome to the Message Boards.

If you cut back on the cream cheese, you will also need to cut the other ingredients by the same amount. (If there recipe calls for 4 and you use 2 you will need to cut the other ingredients in half as well...) If you try it without doing that your end product would not come out right -- probably be too soft to set up properly. If you are worried about how rich the cheese cake will be, you might be able to find a recipe that calls for less cream cheese or you could just plan on serving smaller pieces.

When a cheesecake or other dessert calls for 4 packages of the 8 oz cream cheese, can you cut back to 1 or 2 packages? Would any other alterations need to be done to the recipe? 4 packages sounds a little rich.
