Eggs can be frozen- but NOT in the shell, and it is best to separate them first. (though you can freeze whole eggs by following the directions for the yolks below).

Egg whites can be frozen as is- they actually freeze quite well. Freeze in portion sizes that make it easy to use, as once they're defrosted, they'll need to be used within a day or so.

Egg yolks loose their texture when frozen, unless either salt or sugar is added. Add 1/2 tsp of salt or 1T. of sugar per cup of egg yolks (lightly beaten).

I agree with Deanne, we don't keep fresh eggs (in shell) that have frozen in the nests. Here is what was the USDA says about it:

Frozen Eggs
Shell eggs should not be frozen. If an egg accidentally freezes and the shell cracked during freezing, discard the egg. Keep an uncracked egg frozen until needed; then thaw in the refrigerator. It can be hard cooked successfully but other uses may be limited. That's because freezing causes the yolk to become thick and syrupy so it will not flow like an unfrozen yolk or blend very well with the egg white or other ingredients.

Welcome to the community jesslynn. =)

We have chickens, and when we don't get the eggs fast enough in the winter, so they freeze, we throw them out. Everything I've read about it says they'll be bad.

I was camping last weekend with my family, and we took eggs along for breakfast. However we didn't use all of the eggs and the remaining ones ended up freezing in our cooler? Wondering if they are still good to use, weather it be for frying, scrambling or boiling?
