I have been cruising around the site lately - just getting used to the new design and found a Cheesecake Basics Video that had some real good basic info. I just started making cheesecakes in a 13x9 pan and it comes out great this way.

I'm planning on cutting the cheesecakes into little squares, like Kenburn, and placing them in festive cupcake liners.

mamawama - your suggestion of cutting it into squares is a nice alternative to keeping it whole if something goes awry after it cools. I'll keep it in mind -especially since I'm going to freeze it (for lack of refrigerator space) for Thanksgiving. It'll be easy to slice when frozen - and left to thaw Thanksgiving Day.

jen3314 - it just came out of the oven - ran the knife around it while it's still hot - my thinking was to release it before it cooled to the sides. It looks like it's going to work! Thank you so much for the idea!

Great idea! Would you do this before or after it's cooled? Sorry to sound so wimpy, this is the first time I've ever done this and it's my husbands most favorite dessert!!

If it doesn't come out correctly, you can always cut it up into squares

try running a warm knife around the edges of the pan before you lift the cake out. good luck!

HELP! Cheesecake disaster??

I forgot to grease the sides of my springform pan - is this a total disaster? It's been in the oven for 30 minutes already. I'm kind of afraid for it when it's done baking. Has anyone ever forgotten to grease the pan?
