I use left over cooked meat as the meat in boxed dinners or meals. I have used left over cooked chicken and pork(not together) in place of tuna in a box of tuna helper. I also add cooked meat to boxed noodle or rice mixes. I sometimes freeze leftover cooked veg. untill I have enough to make soup. I also use mashed potatoes to make potato soup. If there isn'e enough of any one thing for everyone. I warm it all up ( sometimes in the oven) and serve it like a buffet,:)

Eli Zabeth, we do that too, Clean Out the Fridge night! My husband is not too keen on leftovers (he was spoiled by his mama), but I make him suffer anyway.

ROFLOL - my mother regularly served us a dish called "clean out the refrigerator". It was never the same two weeks in a row nor could it ever be made again.

Easiest is to make soup or a casserole.

Or I just get creative - Last week I fried up a chopped onion, then tossed in a leftover green pepper, leftover baked beans, & diced up a leftover chicken breast & half a leftover pork chop. I added a bit of chili powder to the mess, then made some white rice and mixed that in along with the last half cup of salsa in a container. Sprinkled some cheddar cheese on top & we were good to go!

Another time I went Italian - I julienned a few leftover green beans, a zuchinni & a carrot, then sauteed them with some oregano & basil. I fixed some noodles & tossed them all together. It was good!

Worst case, I line the counter with all the leftover containers & tell the kids to pick what they want!

Its always good in my opinion to have some pasta on hand--it makes a great base for leftover veggies and meat. I also usually keep chicken stock in the freezer, which also makes a good base for these same items.

Another idea, not to make a meal but to keep those items in the fridge from going to waste, is to keep stock bags in the freezer. Toss in leftover veggies before they spoil, keep a bag for chicken scraps, bones, etc, the same with beef or fish. then when your gallon size bag is full, you should have enough to make a pot of stock!

Sometimes when the funds are "depleted" in the bank and I'm trying to "scrimp and pinch" as Ramona Quimby says, I try to make 3 or 4 meals in a row straight from what I already have on hand. Its a great way to save money and clean out the pantry at the same time. In fact, tonight I didn't have time to grocery shop, so I took some leftover rice, added some scrambled eggs, frozen peas and corn and some leftover chicken and made fried rice. Then I took some scallops out of the freezer and sauteed in olive oil. Simple, quick, and already on hand. Tomorrow night I will be having salmon salad sandwiches (made from canned salmon in the pantry and rolls from the freezer) along with some mixed fruit (canned peaches and fresh blueberries).

I think the key is to keep some staples on hand at all times--pasta, rice, etc, potatoes, cream of whatever soup like someone else posted, some frozen veggies, dry milk in case you run out of fresh, etc.

Casserole Time!

If I've got a can of beans, a can of cream soup or cheese soup, and some rice or noodles, mix all together and pour into a buttered casserole dish. Top with some bread crumbs and bake.

Get creative!

Whenever I have milk, eggs, and bread about to expire, I make this in my crockpot (you can also bake it, but I prefer the crockpot):

Spray bottom of crockpot or even better a crockpot liner with your favorite flavor of cooking spray. Line bottom of crockpot with a layer of bread (frozen hashbrowns work, too). Top with whatever you're in the mood for or need to use up...I like to use cheese, bacon, onions, peppers etc etc. Repeat layers. Beat together enough milk and eggs (I never measure) to cover the layers. Sometimes for kick, I add hot sauce and have even used worcestershire. I then cook on low overnight or during the day.

If you're going to bake this in the oven, most recipes I've seen for similar dishes like this recommend refrigerating your mixture for a few hours and baking at approx 350 for an hour. One of my coworkers uses this method and drizzles melted butter over the top before baking.

hi my question is, when you only have certain foods in your fridge or cupboards and you usually make meals, but there isn't enough to make a complete meal, how do you make a meal out of scraps left in the fridge or cupboards?
