Hi joeismom,
I find that manicotti noodles are fragile. You could undercook them by a few minutes. The will continue to cook when they are baked. You have probably heard of or tried "No-Boil" Lasagna recipes. (The lasagna noodles are not boiled prior to assembling the lasagna. The lasagna is covered with foil and baked.) The same can be done with manicotti. Here is a link to a No-Boil Manicotti recipe. I have also included the Kraft Easy Baked Manicotti recipe. The recipe uses a resealable plastic bag as a pastry bag to fill the manicotti shells. I thought you might find this technique helpful. (I have also included the link for the Easy Baked Manicotti Cooking School video.)

SOMEONE PLEASE HELP. MY MANICOTTI KEEPS TEARING WHEN I BOIL IT. AM I COOKING IT TOO LONG OR SOMETHING?
