When I make fig preserves, I don't use pectin, but just cook it until it reaches the consistency I want. It takes quite a bit of cooking time. I've never eaten passion fruit preserves, but I bet they are tasty.

Hi Heftler, I checked with Sure-Jell and couldn't find a recipe,:(. You should cll the companies toll free #, be sure to post the recipe, it really sound good. annaskf

I had also not found a recipe that used external pectin... but the batches I made last year were a bit soft for my taste.

Perhaps I just need to cook them down more.

In either case, they tasted great!

Hi Heftler,
Welcome to the message boards! I checked our recipe data base and we do not have a recipe for Passion Fruit Jam. I did some research on the internet and the skin of the passion fruit is a very good source of pectin, therefore, the recipes I found do not use commercial pectin. The passion fruit skin is soaked in water over night and then cooked and added to the passion fruit pulp (along with sugar, etc). Passionfruit Jam Pectin Question

I've got a bumper crop of Passionfruit this year and want to make jam.

Can anyone tell me how much fruit pulp to sugar to Certo or SureJell I need? Is there a standard formula?

I can't find a good recipe online that uses commercial pectin so I have no idea.
