Turkey and Stuffing Sandwiches
Makes 20 servings
1 20 lb turkey
5 (1 lb) seasoned stuffing mix
25 chicken bouillon cubes
6 cups chopped celery
3 1/2 cups chopped onions
5 14 1/2-ounce cans chicken broth

Cook turkey, cool and dice into med chunks (save juices). In large kettle, cook until tender: 20 cups water, celery, onion, bouillon cubes, and broth. Add turkey, juice and dressing. Keep moist at 250 degrees for up to 4 hours. Can put in crocks on low or warm. Makes a large batch. Recipe can be cut in half or doubled,

Summer Sub Sandwiches

10 (1 pound) loaves unsliced French bread
10 (3 ounce) packages cream cheese, softened
80 slices fully cooked ham
60 slices provolone cheese
10 (4 ounce) jars sliced mushrooms, drained
15 cups shredded lettuce
20 medium tomatoes, thinly sliced
10 small onion, thinly sliced
20 banana peppers, thinly sliced

Cut the loaves of bread in half horizontally. Spread bottoms half with cream cheese; layer with ham, provolone and mushrooms. Replace tops. Cut loaf in half; wrap in paper towels. Microwave on high for 45-60 seconds. Remove top; add lettuce, tomatoes, onion and peppers. Replace top. Cut into serving-size pieces.

Serve with a variety of chips.

pot luck for 40

I am in charge of food for my next garden club meeting - there are 4 of us and we need to feed 35 - 40 people - does anyone have any suggestions for cost effective crowd pleasers?
