You're absolutely correct in that gum arabic would be the reason for the increased thickening. Gum arabic is added to the Heartwise product as it is a soluble fiber- therefore it can act as a binder for cholesterol in the GI tract.

You CAN use rice milk...if you use the right kind. You should use Rice Dream "Heartwise" (Original or Vanilla). Look for the red heart on the front of the box. The Rice Dream "Original" (without the red heart) will not work. If you check out the ingredients in "Heartwise" you will see that the second ingredient is "gum arabic". And if you look it up you will see that it is used as a "thickener" in some foods.

For some reason, Rice Dream has added this to their Heartwise products along with corowise™ plant sterol esters (which are supposed to lower cholesterol). Anyway I'm guessing its the "gum arabic" that causes the Jello cooked pudding to thicken. I don't use cows milk so I haven't done any comparisons. With the Heartwise rice milk It comes out fine as far as I'm concerned.

I just use the pre made puddin' cups. They're mighty tasty.

Hello, to those who don't drink cow's milk. I have made Kraft puddings with soy and according the milk's maker used corn starch and less liquid and more time cooling and had them set just fine.

Hi Ravenlite,
We tested both the JELL-O COOKED PUDDING & PIE FILLING and JELL-O INSTANT PUDDING with rice milk and they did not set and therefore we don't recommend using rice milk.

We tested the JELL-O INSTANT PUDDING made with soy milk and the consistency was a very soft set, it could be used as a sauce. The JELL-O COOKED PUDDING & PIE FILLING worked using soy milk and the consistency was thick. If soy milk is an option for you and your family, give the cooked pudding & pie filling a try.

I haven't been able to use any rice/soy milk in the instant pudding. Some people have said use half of the liquid called for in the recipe.

Rice Milk

Due to allergies in my home, we don't use cows milk or products. We have been using Rice milk and cheese and on occasion Almond milk.

I tried to make Jell-o instant pudding with Rice milk, well that was nasty. It didn't set. After a day I was able to pour it right down the drain. I used the same ammount of rice milk as it called for milk.

Any suggestion or has this been tried out? Even with Rice milk as a subsitute to milk in other places, it doesn't seem to work as well.
