Whenever I bake a pie I poke the bottom as well as around the sides of my pie crust w/ a fork. Then I also sprinkle a little flour/sugar mix in the bottom to help absorb any excess liquid.

AFTER U PLACE THE CRUST IN THE PAN, TAKE A FORK AND PIERCE THE CRUST, THAT MIGHT HELP, GOOD LUCK CATHY

I agree w/1hotbiscuit. Try blind baking your bottom crust before filling. (aka pre-baking). You can add some dried beans or pie weights to the crust before baking to prevent it from bubbling up. 10 minutes should be plenty (definately check after 5). You want it lightly golden. As mentionede- cover the rim if it gets too dark to prevent burning.

You could prebake your crust for 5 min or so on the lowest oven rack to start to crisp it before adding your filling. If the rim browns too quick cover with tin foil.

Would brusing with egg whites help? I know this is to make crusts shinier but would it make a barrier for the liquid too?

Try refrigerating your bottom pie crust for about 10-15 minutes before putting it the oven, even if you bake a one crust or 2 crust pie. I really don't know why this works, but it does for me. Also, place your pie on the middle rack in the middle of the oven. Heat rises, so it should help the bottom brown better. Good luck!

Soggy bottom pie crust

Please help! I can not seem to get the bottom pie crust cooked thoroughly. It comes out soggy. I am using the ready made pie crusts-not the frozen kind. I have tried to put the glass pie plate on the bottom rack in the oven. i have tried baking it on my pizza stone. No luck! Thanks! Adrienne
