We have a catfish pond, so I use catfish for just about everything that calls for a white fleshed fish. The catfish fillets you get may not be the same thickness or a universal thickness so the cooking time my vary, and may not be quite as firm, but I can't see any reason why it wouldn't be good.

My husband is supposed to be catching a fish for our dinner, so I may give it a try and see what happens. The recipe sounds pretty interesting.

What is your opinion of using catfish fillets in this recipe instead of the haddock specified in the recipe?
