I've never heard of this concept or had the pleasure of eating it but this sounds delicious!! I'm going to try this for sure.

Hi cardinalflyer01,
Welcome to the Kraft community! I have a recipe that sounds similar to what you are describing. I made this last year for our church fall festival.

Pudding in Pumpkin

1sm.pumpkin
Pumpkin pie spice or cinnamon

Cut top off pumpkin; clean out. Sprinkle inside with spice; bake at 350 on rack in a pan filled with boiling water. When pumpkin is tender, pour in hot tapioca. Sprinkle with spice and bake 30 minutes more. To serve, scoop out some pumpkin with pudding and serve with cream, ice cream, or whipped cream.

Tapioca Pudding

1c. sugar
1/2 tsp. salt
6 tbsp. Tapioca
4 eggs
4c.milk
2 tsp. vanilla

Mix all ingredients except vanilla. Let stand 10 minutes. Heat and stir over medium heat until boiling. Remove from heat and stir in vanilla
