Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.
We will remind you again before the transition occurs but wanted to let you in on the exciting news!!

That's the great thing about this community. Throw out an idea or question and you get a ton of suggestions. It's nice because I've been influenced in my cooking so much by my geographical region and the way my mother and grandmother cooked, that it's nice to hear how others approach a cooking or food challenge.

Tamire, that sounds really good. You mention something about liquid, but it didn't look like you added any liquid. Do you just leave the chicken in the pot until it renders its own liquid?

My most favorite recipe from my mom is Garlic Chicken. Now you must understand that my mom began cooking this when the only garlic available came in that cute, little 2 bulb box - I get all misty every time I glance at one in the grocery store to this day! Regardless, she made this great..
1 package of whatever chicken pieces you prefer-I'd do ALL wings if I had my druthers! Whole bulb of garlic-cloves cleaned & slightly crushed Olive oil & butter Salt & Pepper
Brine, Rinse & Dry chicken LIGHTLY Salt & Normally Pepper pieces Heat Oil & Butter in heavy Dutch Oven on stove Brown chicken well - in batches if necessary Add garlic-sprinkle w/additional salt & pepper Cover & cook on low for 20-30 minutes Remove cover & cook til liquid begins to look like syrup, turning chicken pieces as needed. **Served w/mashed potatoes & corn & salad w/that "mom's" dressing which STILL eludes me!! OH MY!!

try the cesar salad dressing and cut up chicken till it browns in a frying pand...add to lettuce with sprinkled cheeses and some hard boiled eggs...very filling

I have a few chicken tips. I buy the cut up chicken when they are on sale (around $4 gets me 2 or 3 meals plus about 10 cups of broth) it normally has 2 breasts, 4 thighs, wings and bones. I marinate the breasts, thighs and wings in italian dressing (I buy tons of it when it's on sale) then I cook this for dinner. Whatever we don't eat I pull and make into chicken salad. I boil the bones and make stock. I let it cool and pour 4 cups into a gallon freezer bag. Then I lay it flat in a large casserole and let it freeze. After it's frozen they can stand in the freezer like books or lay flat. When I need a bit I just smack the bag on the edge of the counter right in the center so it breaks in half (still in the bag) and then again. So I end up with 4 chunks of 1 cup of broth. So I only defrost what I need!

We buy bone/skinless chicken breast and cut into strips; mix any creamy peanut butter you like with soy sauce, hoisin sauce, worchester sauce or best yet seaseme(?) sauce... to make a nice peanut sauce, marinate (up to ) over night. Soak skewers a few mins so they don't burn. Skewer meat and grill about 5 mins or till done.Bulk buying makes this dish economical, over and over. Great for surprise guests. It makes a little or alot. Who doesn't like meat on a stick..lol

I think I actually found this recipe either on this website or in a Kraft mini-book:
Bruschetta Chicken 3-4 chicken breasts (cubed) Italian Herb Seasoning ( I used McCormick Garlic Herb as well) 1 box Chicken flavored Stuffing Mix 2 cans Italian seasoned diced tomatoes 1/4 c Parmesean Cheese 1 c Mozzarella Cheese
Preheat Oven to 375*
Coat chicken cubes with seasoning and place in a Pam sprayed 9x9 casserole dish. In a separate bowl, mix together both cans of tomatoes (UNDRAINED! the "juice" cooks the stuffing while adding flavor) with the unprepared stuffing mix. Pour over chicken. Bake in oven for 30 min. stop halfway to sprinkle both cheeses on top.

My family loves b-b-q , Here's our favorite. 4-6 boneless, skinless chicken breasts bbq sauce (use your favorite. cooked bacon (about a pound) sliced or shredded cheddar cheese salt/pepper to taste
Place chicken in a cassorle dish. Brush on a layer of sauce.Bake at 350 degrees until nearly cooked. Brush on more sauce, top with a layerr of bacon, put back in oven, When chicken is fully cooked, top with cheese, turn off oven and let cheese melt. We usually have this with baked potatoes since the oven is already on. But this time of year we go for corn on the cob.
