This is a twist on the old standby meatloaf recipe. It is cheap to make and goes a long way. 2 lbs ground meat 2 eggs ½ to ¾ jar of hot or medium salsa (whichever you prefer) 1/12 cups of sharp cheddar cheese (or any cheese you prefer like Colby Jack is good…) 1 sleeve of crushed Ritz crackers (I have substituted with Ritz chips) Salt and pepper and worchester sauce to taste Mix all ingredients together Spray loaf pan with Pam Mold meat into loaf and place in pan Bake at 350 for about 2 hours. You might want to cover it with foil after 1 hour because it could get to dark on top Slice and enjoy!

A friend of mine got this recipe off of a can of chicken. It is so quick, easy and cheap and makes so much.
1 large can of chichen (like tuna but chicken) 1 cup of salsa 10 fajita size flour tortillas (or soft taco size) 1 cup monteray jack cheese medium container heavy cream
Mix the chicken and salsa. Roll mixture in the flour tortillas - spread evenly throughout all 10 tortillas. Place seam down in baking dish. Pour heavy cream over the mixture. Bake at 350' for 45 minutes - sprinkle cheese on top during the last 10 minutes.
It is so good. The cream gets really thick and makes a great sauce. Add more cheese if you prefer or use less tortillas and put more filling in. I will guarantee that you can only eat about 1/2 of one because it is so filling. I usually serve it with Dirty Rice or tortilla chips to scoop up the sauce and filling that may be left on the plate. ENJOY!!!

One of our favorite things to make when money's tight is "Tuna-Spinach Noodles", something I concocted when we were first married and SOOO broke! After 26yrs. of marriage, my husband still asks for it often and loves it!!! Just boil 1 bag of extra wide egg noodles and drain. Toss with a few pats of butter (so the noodles won't stick together) and some seasoned salt sprinkled in, some garlic powder, onion powder, lots of dried parsley, and some paprika. Mix well. Add in 1 can of drained water pack tuna and 1 can (well drained) of chopped spinach. Then add in 3 heaping spoons of mayonnaise and a spoon of Ranch dressing with bacon. You can add more mayonnaise if it isn't moist enough to mix well. This is really good warm or cold. Enjoy!

I made up this recipe many years ago when my boys were younger. When I had leftover taco meat, I would make 2 boxes of Kraft Mac and Cheese, add the taco meat and some diced tomatoes. Just before serving, crush and mix in a couple of hand fulls of corn chips. Serve with a side salad and rolls---it always disappeared quickly!

Pepper Jack Frittata
1 red bell pepper, chopped 1 green bell pepper, chopped 3/4 c (3 oz) shredded Pepper Jack cheese* 15 flat-leaf parsley leave, chopped* 1 3/4 c liquid egg substitute (or I use 4 eggs and mix w/milk)
Preheat oven to 375 degrees F. Coat 9" nonstick pie pan with butter flavored cooking spray. Sprinkle peppers, cheese, and parsley in pan. Pour in egg substitute (or eggs you mixed yourself, I grab a glass and make sure I have enough liquid, but I have also winged it for my hubby and I as he likes it with 6 eggs and more milk).
Bake 30 minutes. Cool slightly. Cut into wedges.
Makes 4 serving.
If you want Italian frittata, just substitute shredded mozzarella cheese and 1 to 2 tablespoons of chopped fresh basil.

Another favorite quick meal is based on a Kraft Foods summertime recipe in 2007, called Florentine Chicken. I have adapted the way I make this because their directions made my stove too dirty and took too much time. (Sorry!) I usually serve this with rice.
4 boneless skinless chicken breasts, 5 oz 4 slices swiss cheese italian salad dressing 1 pkg baby spinach
1-1/2 cups regular rice, cooked in 3 cups water with 2T butter
Defrost chicken if it's frozen.
Start cooking rice.
Preheat oven broiler.
When chicken is thawed, place on foil-lined cookie sheet, squirt some italian dressing on each piece, just a teaspoon or so, turn each piece over and put a little dressing on that side, too.
Broil chicken for 4 minutes on each side.
While chicken is cooking, place the bag of prewashed spinach in the microwave. It does not matter if the bag says it can be done this way or not- it works! Cook in bag for 1-2 minutes. The spinach will be tender, bright green, and limp. The bag may pop in the microwave, but that's okay. If you want, you can pierce it with a sharp knife before you cook it.
When chicken is done, remove baking sheet from oven, but leave the broiler on. Mound a fourth of the spinach beneath each chicken breast. Top each chicken breast with a slice of swiss cheese and return to broiler until the cheese is melted and slightly browned and bubbly.
Serve with rice. YUMMY! (this is also very good to take to work as a leftover!) This is a nice enough meal for company, too.
I have also done this with the larger regular bagged spinach (not baby) and used 6 chicken breasts. It is just as delicious. I also cooked the spinach in a gallon-size ziplock bag once and it worked great.

One of our favorite quick budget meals is marinated broiled boneless, skinless chicken breast with rice and another vegetable.
I buy the restaurant sized bag of chicken breasts from sam's because they are all apx 5 ounce portions and will cook in about the same amount of time. Sometimes I get chicken tenders for the same reason...all about the same size.
Thaw the chicken breasts and place in ziplock bag with about a half-cup of Yoshida's Gourmet Sauce (purchased at Sam's, it tastes sort of like teriyaki.) It only needs about 15 minutes to absorb the taste of the sauce. Start cooking rice while the broiler of your oven is heating up. Line a baking sheet with foil to aid clean-up, and place the chicken on the foil. Discard the leftover sauce in the bag. Broil for 4-5 minutes on each side...that is ALL IT TAKES for a 5 ounce breast.
I usually cook frozen peas in the microwave while the chicken is cooking. It is a DELICIOUS meal.
I usually make extras to take to lunch at work. It takes less than 2 minutes to reheat in a microwave and it's just as good the next day.

Tuna Casserole
1 (12 ounce) package egg noodles 1/4 cup chopped onion 2 cups shredded Cheddar cheese 1 cup frozen green peas 2 (6 ounce) cans tuna, drained 2 (10.75 ounce) cans cream of mushroom soup 1/2 (4.5 ounce) can sliced mushrooms 1 cup crushed potato chips
Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Preheat oven to 425 degrees F (220 degrees C). In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese. Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Surprised nobody has mentioned this yet....frozen pot pies! Quick and cheap...serve over rice, bisquits, or mash potatos. I always keep a couple in the freezer for a quick meal.

I have a family favorite from our early years when I had to stretch our dollars as far as I could, and those dollars were very few!
Top Ramen Casserole: 1 boneless chicken breast (more if you have it, but one will feed 4 people...could use leftover turkey from holiday dinner, too) 2 pkgs chicken flavored top ramen steamed vegetable (I always used a cup or two of brocolli for color and texture) 1 c. shredded medium cheddar cheese (optional)
sautee your chicken breast and dice into bite size pieces cook ramen per pkg directions, drain off 95% of broth-leave just a little so your noodles don't get sticky steam veggie while other ingredients are cooking Mix all together, top with shredded cheese, serve immediately-cheese will melt quickly. Very filling, quick meal! Finish out meal with warm rolls or bread, and a big glass of milk. They will not go away hungry.
Kids always loved it, and it was enough for my doubting husband, too! My niece used to stay with us in the summer, and she loved it so much she now makes it for her kids!

This may have other names for it, but I call it "Chicken & Salsa" Its easy to make and the cost is reasonable. I make my own salsa, and it is very simple. You need 1 can of whole tomatoes, 1 can of tomatoes with green chilies, some garlic powder and salt In a blender, put in whole tomatoes and add a couple dashes of salt, then add garlic powder. I don't know how much to add, all I can say is when you think you put in too much, add little more. Blend for about 10 seconds, then add in the tomatoes with green chilies. Blend until desired thickness. Set a side. Cut up 4 -6 chicken breast into bite size pieces Dice 1 onion Fry chicken pieces until almost done, add in onions and cook until tender. (I usually just season the chicken with salt and pepper) Now pour the salsa over the chicken and bring to a boil, then simmer. In a separate pan cook 11/2 to 2 cups of your favorite rice according to the directions. Once the rice is done, Serve the chicken and salsa over the rice. For an added bonus, top with shredded cheedar cheese. This is also low in fat.

I have two that I love and have eaten since I was a kid.
Tuna Delight 2 cans tuna drained 2 cans cream of something (mushroom, celery) milk potato chips
in a 9 x 12 pyrex dump the tuna and soup. Fill the 2 soup cans with milk and mix in. Crush up the potato chips and mix in until thick, it normally takes about half a bag. Bake at 350 for about an hour.
Tuna mac and cheese 1 box macaroni and cheese prepared according to box frozen peas 1 or 2 cans of tuna drained
Mix in as much peas and tuna as you like into the macaroni and cook until it's all warm.

I have a really simple recipe that is relatively inexpensive. My mom used to cook this meal when we were in a pinch for time and budget.
Desired number of Pork Chops or Chicken Breasts 1 or 2 jars of Picante Sauce, any heat you like
Place all ingredients in an oven safe dish and bake at 400 degrees until meat is done.
Most of the time it takes less than 45 minutes to get done. If the chops are thin, it could take as little as 20-25 minutes.

made this for dinner over the weekend...my family LOVED it!! and it's soooo simple!
Chicken & Rice Bowls 4-5 Chicken Breasts 1 lrg jar (26 oz) Salsa (I used Sams Choice Thick-n-Chunky mild) 1 can (15 oz or 2 cups from carton) Chicken Broth 1 can (15 oz or 2 cups from frozen bag) Corn Cooked rice Shredded cheese (I used a mexican blend) Sour Cream
Put all ingredients in slow cooker EXCEPT for rice, sour cream & cheese Cook on low 6-8 hours Shred chicken and serve over rice, with sprinkle of cheese, some of the salsa/broth/corn mixture and a dollop (sp?) of sour cream
SO DELICIOUS!! enjoy 
p.s. I ended up having some extra chicken left over so we used it the next night for tacos, along with beef tacos too (my kids like chicken tacos better than beef)

Hello I just found this site and I am so excited. I found some really good recipes on here that really go along with my budget. We are recently married and trying to budget everything is hard especially food. Anyways, I would love to share with you all my budget friendly recipe.
Unstuffed Peppers
1 lb ground beef/turkey/chicken 1 C uncooked rice 1 jar (15 oz) spaghetti sauce any kind/flavor 1 1/4 C water 2 green peppers or 1 bag of frozen pepper stir fry onion (optional)
Brown meat in large skillet with onion. Coarsely chop peppers (if using fresh). When meat is browned add remaining ingredients to skillet and simmer covered for 20 minutes or until rice is done. That's it. Its super easy and yummy.
