This is one of my favorite casseroles, and it is inexpensive to make with things that may already be in your cupboard.
Chicken Curry Casserole
2 cups uncooked brown rice--a bag of which is inexpensive because it will go a long way. At supertarget a large bag of their Market Pantry brand is as low as 1.19
1 can of chicken breast meat-- 2.50 dollars
1 can of cream of celery soup--1.00 dollar
2 tbsp curry powder--3 dollars if your are buying it new, McCormick seasonings are pretty reasonably priced. I always have curry powder on hand. (If you don't like too much spice you can reduce the amount of curry powder).
1 cup of sour cream--2.00 dollars.
Cook the rice following the directions on the package. When the rice is cooked, mix together the rice, soup, chicken, and curry powder together. Place this mixture in a baking dish and bake for 45 minutes at 350 degrees. After you remove the casserole from the oven stir in the sour cream. And serve.
This casserole can be made ahead of time and put in the fridge. Sometimes I make it the night before or the morning before I plan on serving it if I know I won't have much time in the evening to prepare dinner. If you have any vegetables on hand then you can put these in, but it doesn't need them every time. I like to put celery, carrots, green peppers, onions, and sometimes tomatoes in when I make it.
This will feed a family of four for around $9.60! And you get good whole grains from the brown rice.

That is always a great tip for any meal - not only to stretch the budget, but for health reasons as well. A serving size is a lot smaller than people think, so pre-cutting meat into proper serving-size portions saves money and promotes good eating habits.

i have one more. This one can be served over pasta- my family personally prefers it alone.
sasuage and peppers- - I have a grocery store by me that has fresh sasuage for 1.99 constantly - about 4 large links come to 2.40 - just over a lb 2 large green peppers - about 1.00 there and 1 -2 onions- also about 1.00-1.50 One can of peeled whole tom (28ounce) 1.00 at walmart
total about 6.00 if that -- sometimes buy hoagies and put them on there.
HOWEVER, it should be said, in order to pull this off for more then 3 i cut the sasauge - instead of keeping it whole. It is heartier with every bite, so a little goes a long way.

this one is more because i have a great/cheap grocery store right by me. the always have things like 3lb onion bags for 1.99 etc - i buy two of those and make lots of onion things 
My cheap foods more then 3  1. Chicken noodle soup - 1-2 onions (about 30 cents when buying the bulk bag) 3 chicken bouillion (i buy the 12 pack for about 99cents so it comes out to be 24cents for this part) One can of potatos - (i buy when winn dixie has a sale of 50cent a can), Carrots (i buy a package at walmart 89cents organtic) package of ramen noodles or egg noodles depending on what i have on hand so between 15 cent - 1.50 1 -2 rotiserre chick breast (walmart or publix, already cooked) - comes about to about 2.00 or so depending on how big. total - between 5-7 bucks and it will feed about 6 or more.
2. French onion soup - feeds about 8 Bag of onions (on sale, 99cents) 3-4 beef buillion (99cents for 12 so about 25-40cents for this meal) Swiss cheese, walmart brand, $2.20 french loaf - 1.00 total for 8 people or so = about 5 dollars (many nights i serve this alone because the cheese and bread fill you)
3. (day after i make chicken soup i make this because i have some left over veggies that i have not used) Beef stew- Always get it on sale - about 1-2 lbs - 4.00-5.00 left over carrots - already put in cost of chick soup can of pot - 50cent onion- already in cost of chicken soup Beef stew slow cooker mix - 1.00 winn dixie total - feeds about 4 or so for $6.50

Chilli dip--Its yummy, works for parties or for dinner on a cool fall day.
1 lb of ground meat (can be chicken, turkey or ground beef), browned 1 small onion, diced and cooked with meat
Drain meat/onion mixture.
1 large can of Chili beans (I use Brooks Mild Chili Beans) Puree beans in blender.
In a large saucepan: 1 can tomato soup, meat, 1 block of cream cheese and pureed beans. Warm on medium heat, stirring frequently to encourage cream cheese to melt.
This can be used in several ways: in tacos or burritos, as dip with large corn chips, as chili with shredded cheese, or on hot dogs.

Smoked sausage 1pkg 1 can green beans 1 lg can of cream of mushroom soup 1 medium onion egg noodles 2 cups uncooked
boil the egg noodles until done while the noodles are cooking cut sausage into bite size pieces and cut onion cook the sausage and onion until the sausage is done add the can of green beans drained add the cream of mushroom soup and the egg noodles once they are done

I've often parboiled (partially cooked potatoes) in the microwave prior to adding to a meal like this. Depending on the amount of potatoes, it only takes 5-10 minutes. I like cooking a very similar meal with Turkey sausage and cabbage plus the potatoes and peppers. It's a great meal and would certainly feed four for under $10.

Look at the back of Macaroni pkgs for recipes (which are always under 10.00) and the back of soup cans as well are 99% of the time under 10.00. Recipes from beef stroganoff, chicken and rice casserole, etc. Quick easy ideas and you probably have a lot of the ingredients at home on hand pretty much all of the time.
All prices based on my grocery store prices most of the time not on sale as well so your store could be cheaper. Buy store brand on most things (some things you just have to have the name brand, for quailty purposes and that depends on personal preference).
Recipes!!!
1) Tacos 1 lb ground beef or turkey cheese shells (hard or soft) Sour cream, taco seasoning, taco sauce
2) Spaghetti 1 can of Hunts Spaghetti sauce (0.99-1.45) Spaghetti Noodles (0.99-2.00 depending on your preference) 1lb Bob Evans Italian sausage or the Zesty (little spicy for those who like it) (2.00-3.49) 1 Loaf of frozen garlic bread (usually about 2.00) If your family is small you can cut the loaf in half and save the other half for another night. Total about $8.94
3) Hamburger helper (any kind you like, we only eat on occasion i keep a box or two in the pantry for quick easy on the go nights) @1.00-2.49 1lb. Hamburger or ground turkey (1.99-3.49) 1 Bag Salad (1.00-2.49) french bread from the bakery (andersons always has them for around 2.00) Total about $10.00
4)Breakfast!! (kids love it for some odd reason) Box pancake mix (around 2.00) Bacon or sausage @3.49 Eggs @2.00 Scrambled with some cheese!! everyone has syrup and bread on hand incase anyone also wants toast. Total @7.49

Well this is just something I auctually just whipped up yesterday. I was out all day while the hubby was at work and kids were in school, getting some errands done and some shopping. I forgot to take something out of the freezer and we had more things to do after they all got home. I just went for the ramen noodles, quick fast and easy (cheap too!). I opened the freezer and we had the Green Giant (single/2) serving box of teryaki vegtables so I mixed a couple of box's with the ramen noodles, added some more teriyaki sauce from the fridge and it was done. Just may make it again for a quick fix, especially baseball season, and all the other things kids have going on. Good meatless dinner. Get all of you veggies!!
Feeds family of 4 for under $5.00 3-4 pkgs. Ramen Noodles about .15ea 2-3 box's Green Giant Teryaki veggies (10 oz. box) is 1.00 Total between $3.45- 4.60

Cranberry Chicken over Barley with Green Salad, and Pudding Parfaits for dessert
Chicken: 4 Boneless, Skinless Chicken Breasts ($2.50 for 1 lb) 1 can Whole Berry Cranberry Sauce ($1.50) 1 pkg Onion soup mix ($.75) 1/2 c water Place chicken in greased baking dish. Combine other ingredients, with salt and pepper to taste, and pour over chicken. (I add extra dried cranberries when I have them.) Cover with foil and bake at 350 for 30-45 minutes.
Barley: Place each serving over 1 cup cooked barley ($.75) that was prepared in Chicken broth (a staple in my house always stocked up on when on sale).
Salad: Pre-mixed Bag ($1.50) served with dressing on hand
Dessert: Your favorite flavor, or two, of pudding ($1.50 for two small boxes, milk always on hand) layered with "cool whip" ($1.50) If I have fresh fruit or even Marschino cherries left over from Sundae night, this goes on top or in the layers.
My prices are based on store brands or bulk section, which is what I buy. These are some of my kid's favorite main dishes and desserts.
$10.00 on the nose. Enjoy and make great memories!!!
