Here are five recipes that use a ham bone. The most common one for "up north" is the split pea soup. My husband just loves it with "johnnycake" which is just corn muffins in a cake pan.

I love AuGratin potatoes with ham baked in, fried rice, loaded potato soup (mine has a pound of cubed ham in it and it's SO good), slice it and make a panini, ham biscuits and all the rest of the breakfast works.....Just a couple of ideas! Oh but my favorite, a big pot of Northern beans with all the leftover ham simmered all day with cornbread.

I am always looking for things to do with leftovers. When I have leftover chicken or turkey it usually becomes tettrazini (sp?) or enchilladas. Leftover steak usually becomes fajittas. Leftover salmon becomes salmon patties. Or I will combine with veggies and put with pasta, i.e. beef and noodles with shredded pot roast/chicken etc. I also use the firmer cuts of roast and make chop suey. When I do that it's with carrots, onions, gr. peppers, celery or anything in the veggie drawer. (brocolli and asparagus even) I add tomatoes at the last to just heat thru. Serve over rice. To make a sauce I just use cornstarch and water then add soy sauce and browning sauce/Kitchen Bouquet. Add garlic and other stuff to your liking.

thanks for the idea of adding chicken to the hashbrown casserole. I did this last night. I had a leftover chicken breast from Thur night, so I cubed it and added it and made a meal for 5 from one chicken breast....thanks!

I make one really similar to you.. I use a package of frozen hashbrowns thawed (I like the Southern Style with the gr. peppers and onions) I stir them with a can of cream of mushroom, a small container of sour cream, and shreded sharp cheddar. I like to add chopped ham and onion, but you don't have to. Put the mixture into a casserole ( I usually use a 9 x 9 or 9 x 13 depending on how I want them cooked, and bake at 350 for about 20 - 30 mins. Yummy.

This is great, I've been looking for easy asian ideas. Do you think this would work with freshly steamed rice as well?

here are some of my favs...

Pork Chops (even shake and bake works fine with this) - Next day I make pork fried rice with a leftover pork chop

Sasauge and peppers- Next day, Make a pot of sauce and only need a small amount of meatballs because i add the sasauge and peppers the bowls (dont put it in the sauce b/c im a nut about leftovers going bad, only use for a day or so)

Next day for sauce I make something like chicken parm or eggplant parm etc.

If i make steak stir fry, i sometimes will make eggs if its a weekend the next day and have steak and eggs and veggies.

Sure! I didn't add the onions, which it said were optional anyhow (I'm not an onion fan) and I added in spicy italian sausage for to make it a one-dish meal.
