Same here! I use my mom's old trick. I have a gallon sized ziplock in the freezer, and all the little bits & pieces get tossed into that. When it's full, I dump it all into a crockpot, adding more rice or noodles (or ?) & whatever seasoning makes sense, then we have random stew for dinner

Hashbrown Casserole 1 pkg frozen southern style hashbrowns 1 Large can (or 2 regular cans) cream of chicken soup 1/4 cup chopped onions (Optional) 1 cup shredded cheese 1/2 stick of butter 1/2 + or - of italian bread crumbs Take the stick of butter and butter a 9 X 13 dish. Mix all the ingredients together except the butter and bread crumbs. Pour into baking dish. Melt the remaining butter in a coffee cup in the microwave. Then add bread crumbs and mix with a fork. Sprinkle evenly over casserole. Bake 350 for 30 minutes or until bubbly.
VARIATIONS My aunt uses 1 small can cream of chicken and a container of sour cream and a pinch of paprika. And instead of the bread crumbs, she uses corn flakes. Butmy kids eat the corn flakes so I use bread crumbs.
Also, try the hashbrowns with peppers and onions . I love it, but my kids do not. Great for dinner or breakfast! Hope you enjoy!

I have a family of 5 so we seldom have enough leftovers for another whole meal and I find myself with bits and pieces of previous meals in the fridge. I've found that using those little portions of leftovers as filling in a tortilla wrap is a great way to use them up and also make tasty meals even my kids love. I often add shredded cheese, barbecue sauce or other dressings to jazz up the flavor. To make a hot meal, try baking the wrap until the tortilla is crispy or making a quesadilla - my kids LOVE these hot wraps!

This is exactly what I was thinking about for using up my leftover roasted chicken. I don't have any mixed veggies but I'm thinking about using peas and mushrooms.

Tonight I am making chicken rice and gravy, although not really gravy. When I cook couple of chickens for stock I always have a lot of leftover pulled meat. I mix as much meat as I want with a can of cream of mushroom, can of cream of chicken, veg-all drained and a soup can of milk. A little salt, lots of black pepper, garlic and onion powder and parsley. Simmer until the chicken is warmed through (you can also bake if you want). Serve over rice. This makes a surprisingly good meal for such simple ingredients.

The kids like when I take leftover chicken and make BBQ Pizza. Take a pizza crust, and use BBQ sauce instead of pizza sauce. They like the chicken and cheese. Pineapples are good on it as well.
Leftover taco meat?? Works great on a pizza, too.
Left over meatloaf? Crumble it and make Cheeseburger Pie: 1 lb lean (at least 80%) ground beef 1 large onion, chopped (1 cup) 1/2 teaspoon salt 1 cup shredded Cheddar cheese (4 oz) 1/2 cup Original Bisquick® mix 1 cup milk 2 eggs 1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. 2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese. 3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate. 4. Bake about 25 minutes or until knife inserted in center comes out clean. I can omit the 1st part of step # 2!

Chicken Bundles Leftover chicken, shredded or torn into bite size 3 tbs butter, melted 1 pkg cream cheese, softened 1 pkg crescent rolls Combine chicken, butter, and cream cheese. I also like to add a little garlic powder. Drop by the spoon onto each crescent roll. Seal it up, into a bundle. Bake until golden brown.

If I have leftover roast chicken I make a chicken and noodles. Boil small bag egg noodles, drain. Add leftover chicken, 1 can Crm of Chicken soup, some Velveeta (about a cup I suppose) add a little milk to thin to desired consistancy and then add a little pepper to taste. Heat until cheese is melted. Cheap, simple and quick!
