I, too, love the soup idea, but we have done the baked potatoe bar, as well as taco bar (offering soft shell, hard shell, and chips for taco salad).
As far as amounts, how much would you like to serve each adult? If you are using styrofoam bowls, then 1-1/2 cups would be enough. So then how much does one pot of soup serve? Maybe I am helping.
Hope it all turns out well!

One of our favorites is a baked potatoe bar. Potatoes can be baked at home and kept hot in a cooler lined with a towel. Keep them wrapped until ready to serve. Have fun with the toppings: chili, shredded cheese, broccoli and cheese sauce, sour cream, real bacon bits, etc.

There are some planning tips here: http://www.kraftfoods.com/kf/Entertaining/Planning/AppetizerMath.aspx
Good luck.

Debbie - Here is something "different" - Tacos on the Go
Brown a bunch of lean ground chuck with taco seasoning.
Chop onions, bring sour cream, slice lettuce, chop tomatoes, shredded cheese, salsa, anything you would like on a taco.
Get a large box of Fritos (small bags) from Sam's Club or Costco.
Slice open the top of the bags and have everyone serve themselves from the various bowls of the above options.
Eat from the bag (seriously).
Sorry, I do not have amounts as I just usually take a guess and it works out for our church.
Good luck. I am doing a spaghetti dinner for our church on the 19th and I do not know how many plan on attending as it is a fund raiser. I may have 20 or I may have 100 but that's okay, we have done this before and all worked out fine.

I really enjoy soup dinners and they usually require a minimum of facilities. Add breads, crackers and cookies or brownies for dessert and you have a great meal. Remember to provide lots of bowls and spoons though, because many people will use multiple bowls and spoons.

Super simple & delicious...
Italian Sausage & Meatball sandwiches...since you're serving so many people I'd go with 4-6 packages of italian sausage (there's usually 5-6 links in each package) and a large bag of frozen meatballs - cut the sausage into 2" pieces and throw into a slow cooker with the meatballs and 3-4 jars of sausage flavored sauce - let simmer for 5-6 hours on high - serve with sandwich rolls (I like the ones from the bakery)

Chili is usually an easy option. It can be served with cornbread.

My church hosts a free community meal that serves about the same number of people you will be. So far we've found great success in spaghetti dinners. Have about 5 people bring crock pots full of sauce, and if you can, cook noodles on site, otherwise be sure to add butter or oil so they don't stick together. A little salad on the side makes the meal complete.

Debbie78217, The salad ideal was good. I know that you didn't want sandwiches, but at a gathering at our church we had so many bring their faviorite homemade soup, and some brought salads then we had sandwiches to go with it. It really was a hit! If you really don't want sandwiches, you could have some bring a cheese tray. Of the salads one was a fruit salad. Lots of luck, let us know what you done and how it turned out. GOD Bless, annaskf

Welcome to the community Debbie. =)
Crazy is fun! You could ask for different salads. Everyone has some favorite that grandma used to do, then have a few people bring rolls?

I am new to the posting game but I am desperate! I have to serve between 100-125 adults next Friday 9/18 at church before a seminar.. They want it simple...no fuss. About 2 weeks ago they had a dinner before another seminar and it was sandwiches that people made and brought. I could do that again but wanted to do something 'different'. It will still be brought by members of the church but needs to be quick and simple....am I crazy?
