A rave review! Woot! It's been a little cool here due to the storms we recently had, so I'm definitely not up for ice cream at the moment, but this is one I will be using laterwhen it warms up a bit again!!

I just wanted to tell you I tried your ice cream pie over the weekend and it was really good. I used Starbucks Java Chip and my husband said it was definitely a keeper for our weekly dessert treat.

Sweet-n-Tangy Meatballs

1 bag Frozen Meatballs (my bag had 80 meatballs)
3 cups Honey BBQ sauce
1/3 cup Apple Cider Vinegar
1/2 cup Water
1/4 cup Brown Sugar
Sprinkle of Salt/Pepper & Garlic Powder

Put meatballs in slow cooker...stir together all other ingredients and pour over meatballs...cook on low 3-4 hours

Always a hit at pot lucks:
peel and slice a cucumber or two,
slice some bell peppers (all colors),
slice a purple onion,
wash up some cherry or grape tomatoes.
Put them each in their own plastic bags and keep in the refrigerator until ready to serve.
At serving time, dump the bags into a large bowl and pour a bottle of Zesty Italian salad dressing over everything. Toss and serve.
It's cool, easy, and delicious. Plus, there's no mayonnaise to worry about spoiling.

Here are some recipes my family uses for parties/cookouts during the summer time and you can make all of them ahead of time!

Cold Grape Salad
1 bunch of green grapes and 1 bunch of red grapes
(all seedless)
Beat together a package of softened light cream cheese and a package of light sour cream. Then add a dash of vanilla extract and mix in the grapes. then you can add some chopped pecans or walnuts in as well. You can make ahead and refrigerate overnight.

Fruit Salad
2 cans of mandarin oranges
1 can crushed pineapple
1 jar red maraschino cherries
(drain all really well)
mix with a carton of sour cream, shredded coconut, chopped pecan pieces and marshmallows. Refrigerate.


Ambrosia Salad

Slice up orange segments and grapefruit segments and mix with shredded coconut and cherry halves.


Fruit Coleslaw
Buy an already prepared pack of coleslaw and add mayo, a little bit of honey, a little white vinegar, granulated sugar and chopped up green apples.

A really easy/cheap frozen dessert is also to take a graham cracker pie crust and spread chocolate fudge sauce along the bottom and then spread coffee ice cream on top. then spread on a layer of cool whip and drizzle chocolate sauce on top too if you like and freeze overnight.

Fiesta Pinwheels (great appetizer)

Cranberry-Pineapple Minis (easy side)

Banana Pudding Squares (my favorite dessert!)

I graduated last year, and made these adorable treats that look like graduation caps that were super easy!

You just need mini reeses cups, chocolate covered graham crackers, peel twizzlers, and some peanut butter. Use the peanut butter to stick the grahams on the bottom of the reeses, then break up the twizzlers into small segments and use peanut butter to stick them onto the graham crackers. Super cute, and really easy!

At our graduation BBQ the easiest dish was the 4 bean salad. Green Beans, Wax beans, black beans and Garbanzo beans. Chopped onion and parsley. Sweet vinegar mixture. It doesn't matter if it stays cold and can be put together the night before.

What a great tip, dwndk... Watermelon bowls can be gorgeous, even the more simple cut you mentioned to just take enough top off to make a bowl. If someone is worried about the fruit getting warm, you can save the top to use like a lid, or sit the watermelon bowl in a larger pan filled with ice. I'm sure there are more options as well.

The Kraft site does have a lot of ideas. I personally have these as my top two favorites.. if the party is during the daytime, then cool fruit is awesome; if the party is at night, I actually love mozarella sticks and they seem to hold up pretty well so they taste good even if they're not fresh from being made.

A healthy side that is really easy and you can make it the night before is a fresh fruit salad. I like to use watermelon, grapes (green/red), strawberries, canalope, kiwi. Anything that you like. The night before, I clean and cut up my fruit and put it all in seperate ziploc bags and refrigerate. Then just before the event I throw it in a bowl.

If you want something eye-catching on your serving table. You can carve the watermelon into a serving bowl. This can be done a day or two before; you just have to wrap it in saran-wrap and refrigerate. Look at the web site http://www.watermelon.org/index.asp then click on Carving and Fun Ideas. There are several themes for carving a watermelon that may follow a theme you like. It can even be as simple as: turning the watermelon on its side, cut a small sliver off the bottom so it will not roll. Then cut about 1/4 off the top of the watermelon (just cut enough off the top to make an openig for a bowl), scoop out the watermelon for the salad and your done. Wrap melon with saran wrap and refrigerate until ready to serve.
*TIP* you can use a sharpy pen to draw on the watermelon as a guideline for cutting.

Congratulations!

Good pasta salad you can make a few days before.

1 box medium past shells
1 can pineapple
2 cups shredded almonds
3 cooked boneless chicken breast
miracle whip to taste

Drain the pineapple slices and chunk them up, cook the chicken breasts and chunk those as well. Toss all into a large bowl and mix miracle whip to taste/texture.

Garden Pasta Salad

1 (16 ounce) package uncooked tri-color spiral pasta
1/2 cup thinly sliced carrots
2 stalks celery, chopped
1/2 cup chopped green bell pepper
1/2 cup cucumbers, peeled and thinly sliced
2 large tomatoes, diced
1/4 cup chopped onion
2 (16 ounce) bottles Italian-style salad dressing
1/2 cup grated Parmesan cheese

Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.
Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.
Chill for one hour before serving.

California Cole Slaw

1 small head cabbage, shredded
1 small white onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small carrot, shredded
1/2 cup cider vinegar
3 tablespoons white sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup vegetable oil

In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Combine the vinegar, sugar, salt, pepper and vegetable oil in the bowl with the vegetables. Toss the mixture until the vegetables are fully coated with the marinade.
