Also for outdoor concerts. I'm trying to think of things that could be made ahead of time and enjoyed. Fruit salad, shrimp & cocktail sauce, a slush, some kind of dip for crackers. I'm open for suggestions....

We just went on a 3 day roadtrip and here's what we packed: ham steaks (precooked so you can eat cold, in a sandwich or plain), cottage cheese, yogurt, fresh veggies and fruit (cucumbers can be eaten whole and are very filling), hard boiled eggs, jello with fruit (I use old yogurt cups for individual storage), canned tuna, bread and mayo for a tuna sandwich, canned fruit (don't forget a can opener) and muffins.
Hope you have fun!

A cooler is just a refrigerator with a water hazard. Many things you snack on straight from the fridge would work in a cooler. Grilled chicken, chicken salad, pasta salad, milk right from the carton etc.

No grill or fire, just a cooler and a horse trailor.

Will you have access to a grill or camp fire? If so, you can make a ton of things... this thread (Recipes for Camping Trips) had some great ideas.
No grill or fire? I'm not sure what else there is other than lunchmeat and fruits and veggies that would last a while. Trail mix and beefy jerky, I guess lol

It is the time of year where our family eats a great deal of meals out of the cooler. We will be gone on vacation/horse show for 3 days and eat out of the cooler. I need some ideas. Generally, we do:grapes, string cheese, salsa roll ups, apples dipped in caramel, peach cups, pudding cups, sandwiches (turkey, chicken salad, bologna), brownies, etc. I need new ideas. This weekend we will be gone for the weekend showing and need to eat out of the cooler. We willl eat lunch and dinner from it. My family would LOVE new ideas. Thanks in advance.
