My husband and I just moved back to the mainland from Maui and you can't go wrong with fried rice. Of course over there it has portuguese sausage and/or spam in it. Other favorites are Chicken Katsu are teriyaki chicken.

I bet you could replace the pine apple with pear/pear juice, or even peach. I'm not a big maraschino fan, I was thinking plums and maybe some sort of nuts would be good.

I would recommend a dessert of marshmallow delight. It's super easy and doesn't take much time. Plus it is cool and has a island feel. PINEAPPLE MARSHMALLOW DELIGHT 1 lg. can crushed pineapple 1 bag lg. marshmallows 1 lg. jar maraschino cherries 1 pt. whipping cream Put marshmallows in a bowl with juice from pineapple. Put a plate on the top of the bowl and leave in the refrigerator overnight. Any juice left the next morning, drain off. Add pineapple and 1 pint of whipped whipping cream. To this mixture add 1 jar of sliced maraschino cherries; chill.

Mmmm. The chicken adobo sounds absolutely wonderful. Can it be used with white meat of the chicken as well, or would those cuts not give the same kind of flavor?

We are attending a Hawaiian themed pot luck this weekend. It should be a great time - the hosts are roasting a hog and providing the beverages. We're to bring a Hawaiian dish to share. I've spoke to a few others; they have plans to bring tropicial fruit salad; a crab salad and one a dessert. What should I bring? Any fun Hawaiian ideas?
