My husband and I just moved back to the mainland from Maui and you can't go wrong with fried rice. Of course over there it has portuguese sausage and/or spam in it. Other favorites are Chicken Katsu are teriyaki chicken.

I bet you could replace the pine apple with pear/pear juice, or even peach. I'm not a big maraschino fan, I was thinking plums and maybe some sort of nuts would be good.

In addition to my previous question, I am also curious about the Pineapple Marshmallow Delight. Can any fruit be substituted?

I would recommend a dessert of marshmallow delight. It's super easy and doesn't take much time. Plus it is cool and has a island feel.
PINEAPPLE MARSHMALLOW DELIGHT
1 lg. can crushed pineapple
1 bag lg. marshmallows
1 lg. jar maraschino cherries
1 pt. whipping cream
Put marshmallows in a bowl with juice from pineapple. Put a plate on the top of the bowl and leave in the refrigerator overnight. Any juice left the next morning, drain off.
Add pineapple and 1 pint of whipped whipping cream. To this mixture add 1 jar of sliced maraschino cherries; chill.

Mmmm. The chicken adobo sounds absolutely wonderful. Can it be used with white meat of the chicken as well, or would those cuts not give the same kind of flavor?

I just had a Luau, and the biggest hit was Chicken Adobo served with rice. If you are looking for a side dish, I also loved the Aloha Sweet Potatoes. Here are the links:

I had many people request a copy of these recipes...Enjoy!!

I would think a kabob with pineapple slices would fit right in.

I have to say I have never made a Hawaiian dish… I did a quick search and came up with this list:

The Lanai Baked Beans look like they would be a good item to bring.

Hawaiian Themed Pot Luck Any Suggestions??

Posted: Sep 1, 2009 5:59 AM
We are attending a Hawaiian themed pot luck this weekend. It should be a great time - the hosts are roasting a hog and providing the beverages. We're to bring a Hawaiian dish to share. I've spoke to a few others; they have plans to bring tropicial fruit salad; a crab salad and one a dessert. What should I bring? Any fun Hawaiian ideas?
