Eli2abeth,

If you google "grillades", a whole bunch of recipes will pop up. Here is a link to what looks like a good one.

http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=536117

I usually put a little red wine in my recipe.

For this particular brunch, it was the morning after my Widowed Dad got married. It was such a special occasion and with so many people in town for the event, I couldn't let it go by without having something for them and all of the family. Time was short, so I did make so many things ahead of time. Grillades are one of those things that I could make ahead and freeze. There was so much, that during the day of the brunch, I defrosted and put in my counter top roaster to keep warm and just refilled the chafing dish as needed.

The asparagus were prepared the day before as well. Just blanched, then I used a bottled vinegarette dressing to marinate in. It made a beautiful presentation on a pretty crystal platter.

I needed things to be a simple as possible.... so preparing in advance was my key.

Good Luck and Oh.... grillades pronounced Gree Ahds

Cathy

black eye peas...

Cathy - you & I obviously come from different culinary cultures! Your menu looks great, but....

What is a grillade?
What does on marinate asparagus in?

LOL - and I have never ever made or been served black eyed peas or grits of any sort, much less cheese or garlic ones!

How early will your guests be arriving? If they are going to be arriving and eating before noon, definitely brunch food.

I've had a brunch in the past and served grillades (make ahead) and baked garlic cheese grits (make the day before and bake the day of), fresh fruit garnished with fresh chopped mint, blanched marinted asparagus (make the day before) and store bought mini croissants. Good appetizers for this: cleaned fresh celery (leave the leaves on -it's pretty) stuffed with a mixture of blue cheese and cream cheese, and olive tapenade with crostini . Good desserts: bought form the bakery.... pick up eclairs, etc. Mimosas are a definite.

If afternoon, may want to consider the traditional New Year's Day menu of black eye peas, cabbage.

I always have a New Years day lunch party with black eye peas, cabbage, sprial ham, cornbread. My guests bring pick-up appetizers and desserts to go along with the menu.

Good Luck

Your menu sounds great, and pretty easy, and you're right about the Mimosas. They are just the right touch.

I agree with Cam. I love me a sausage ball or two.

How about sausage balls, french toast casserole, and a fruit salad.

Given that most stay up too late, and might drink some, muffins of any sort will probably go over well.

My brunch menu would maybe include a ham, some croissants, fresh fruit, maybe some scrambled eggs, and a yummy punch!

Hello, bnjc. Welcome to the community and the Kraft message boards. If you are from the south, any New Years meal anytime of the day would have to include blackeyed peas for luck.

Thank being said, breakfast casseroles are great because many can be made ahead and baked right before the brunch. Muffins and quick breads are also good because they don't require perfect timing. I usually serve fruit salad when we cook brunch.

Welcome to the Message Boards!

If you are looking for ideas, have you checked out the recipe search up on the upper right (click on the arrow beside the orange "Search" button) with "Brunch" as the Recipe Category? There are all kinds of recipes you could check out there.

If you want some of the members favorites I always like quiche. I think it is easier than making eggs and can be as fancy as you would like depending on presentation and ingredients.

If it were me, I would make cranberry orange muffins (they are festive and easy) with possibly a breakfast casserole (french toast casserole is a good one) serve a choice of coffee, hot tea, orange juice or even cranberry orange juice. (just cut up an orange and place it in cranberry juice overnight, it looks fancy and tastes yummy. :) Have fun!:)

I once saw a recipe to fill muffin tins with phyllo dough and add an egg in each one. You can then top it with whatever veggies or meat you want (green onions, shredded carrots, sausage, red pepper, ham, etc). Lastly, just bake at 350 until the egg and phyllo are cooked thoroughly. It looked really fancy, but seemed easy!
