when ever i make brats or dogs, i always steam them. i wouldnt think that it is a problem using beer to make your dogs or brats. they arent going to get wasted eating them!! if you do decide to go the beer route, use a good ale or a porter. both are so very good...! good luck. well, you did mention that it is an office. so i would recomend to bring your beer in a plastic bag. yes, it will go flat, but you dont need the carbination anyhoo.

It sounds as if you have more than one croakpot, so why don't you cook the hot dogs or sausages...(may I suggest Polish Keelbassa?) in one for many hours and then cook the kraut or peppers and onions for way less time. Then just mix it all together when everything is done.
If you want to make ahead, try a hot dog and saurkraut jello mold. Very retro. Would be a big surprise as long as you serve it before it melts.

Where do you work that you are serving hot dogs and sauerkraut to employees?
I have some resumes out and I may need to pull one back....

You need to cook the hot dogs/sausages first then add the sauerkraut, otherwise your sauerkraut will be over cooked. I like to cook my sausages in beer and onions, but since it's an office you could cook them in beef broth and onions. I'd add the sauerkraut in about 15 minutes before serving.

You should keep the sauerkraut separate so your vegetarian employees can have something to eat.

Personally, I would keep the sauerkraut separate - not everyone is a fan of kraut.

Sausage or hot dogs & sauerkraut

My company is planning an employee event and we wanted to cook either sausage or hot dogs in sauerkraut in crock pots. Can we put the sausages or hot dogs in the sauerkraut to cook like that or do we cook them separately? I've been told that we should cook the sausage with peppers/onions 1st, then mix into the kraut. Thanks.
