Sounds wonderful and good luck! One tip: Don't try the recipe the day you're serving it - give it a test run first well before so you can tweak it if you need to.

The suggestions you've been given are really good. One of my SIL's is a vegetarian although she will eat eggs and dairy, and when she and my brother come for the holidays, we make few changes in our cooking except to make sure and have plenty of cooked beans, vegetables, salads, and plenty of egg, cheese and non-meat proteins she can choose from. Since we eat a lot of vegetables anyway, it doesn't ever seem to be a real issue. About the only thing I actually change is using vegetable stock in my Thanksgiving cornbread dressing and I leave out the oysters. It may not be quite as good, but it's still plenty good for the family.

I think my SIL appreciates most that no one makes a big deal out of it.

Probably the first thing you need to know is what kind of vegetarian she is. She may still eat fish, eggs or dairy, or none of the above.

Sounds like a winner to me lwoodacre. And you're right it is a dish that everyone can enjoy even if their not a vegetarian. ;)

I just tried the Velveeta cheesy chicken & Broccoli Rice I can see how it can be vegetarian easily enough without the chicken and using vegetable broth. Add a little more broccoli and sliced water chestnut, It may work for you.
I used fresh broccoli,slightly steamed, and I cooked 1-1/2 cups of converted rice in place of the instant rice. a pinch of cayenne pepper, (optional)The Velveeta cheese makes it nice and creamy. Baked in a greased baking casserole for 30 minutes.

hi lwoodacre, The ideal about the turkey is a good one, but for 1 person or serving?!? I take it that your sister hasn't ask you to fix anything just for her? Maybe you could ask her what she wants you to fix? Lots of luck and let us know what you done. annaskf

I'm not a vegetarian,but I have a friend who is. For the holidays she buys a Tofu Turkey which can be purchased at most health food stores and she also makes a cranberry, apple, and walnut stuffing to go along with it.

Oh I did think of one thing, roasted butternut squash ravioli with balsamic reduction. That would be pretty, festive and delish. Or even a cranberry compote ravioli with a butternut squash dressing or perhaps spinnach, cranberry and goat cheese ravioli with a nice beschemel and cheese sauce with toasted pine nuts. We did say vegetarina and not vegan right??!! Hope any of these ideas might open your door to inspiration.

I'm not a vegetarian, but do not eat red meat which causes the same freak out "What can I make her, what will she eat"?

My feeling is there are always meatless sidedishes around the holidays which I am fine making a meal out of. I load up on all the veggies and some crescent rolls.

A nice filling vegetarian meal is a big slice of quiche like Spinach and Mozz or Tomato and Basil
Try Meatless Lasaganas, raviolis and pastas...
