Like [vork1] I reduce the amount of ground beef I use. I brown ground beef with peppers, onions and garlic, and portion it into 6-8 oz servings. I use one portion for whatever I am making (spaghetti, tacos, Spanish rice, etc) adding mushrooms, taco seasoning, spaghetti sauce or whatever to the dish I am making. I get 3-4 meals from a lb of ground beef (I generally use chuck or round). When my family was young I had a husband and 6 children (3 boys [big eaters] and 3 girls). I never used over a lb [usually 3/4] of ground beef for a meal, unless I was making burgers or meatloaf. I cooked in a 20 qt pan.
Another way I stretched was to mix the beef mixture with home canned tomatoes (I now substitute V8) and lots of vegetables (corn, beans [green and yellow], carrots, potatoes etc. (I now use a California blend), cook till vegetables are tender and serve over rice or pasta. I was easily able to feed a crowd of 10-15 with a lb or less of meat and my home canned vegetables.
One more stretcher is to take a couple hot dogs and mix with a can of corn and a potato or two (iused a couple quarts of corn and several potatos back then), cook in a covered pan till the potato is tender (checking that it doesn't burn). this is a great inexpensive meal with a salad. If my husband insisted on a sandwich with it, I took the other 8 hotdogs (I used the 10 pks of hot dogs then) and cook over top of the mixture, have buns or bread to make the sandwiches and you had a huge meal.

I make a samosa dough and fill with a scrambled egg and sausage mixture, then bake them. They are larger and more like a meat pie, but using biscuits sounds even easier.
Also freezing biscuits with cooked sausage is something I've never tried, but it sure sounds like it would work great.

Another variation on the homemade breakfast sandwich is using waffles instead of biscuits. I toast two waffles for each sandwich and fill with the breakfast items of choice. We enjoy them made with egg, cheese, and sausage or bacon - spread the waffles with butter, jam, or even some maple syrup - delicious!

We do this too! It taste better and so much cheaper! I also "fry" eggs in cooking spray to add sometimes.
Our house favorite is: Bacon, egg and cheese biscuit
You can also roll out the biscuits and fill with the same things you put on the biscuits, just chopped. Fold over and seal the seams with a little water and a fork. Bake in the oven how your biscuits tell you to and you can pop them in the toaster or nuke them the next morning for a treat that is very similar to a product found in the frozen food aisle!

As a wife and mother with 2 adult children living at home while attending college, food budget is always a challenge. We all were stopping for breakfast in the drive through lane on a regular basis. That can become very costly very quickly. I make a big breakfast each Sunday morning with eggs, hashbrowns, sausage or bacon, and biscuits. One morning, I put together the leftover meat and biscuits and stashed them in sandwich bags then into a bigger Ziploc bag and put in the freezer. We all grabbed one each morning and zapped them in the microwave on the way out the door. Now, I spend one Sunday per month making up bacon and sausage biscuits. The cost is about .30 cents per biscuit compared to $1 or more at the drive through. You can add cheese and/or eggs....it all freezes very well and nukes up nicely!

Welcome to the Kraftfoods, community momooftwo39. Great suggestions. There is an additional advantage of stretching your meat servings when they are served in a rice or pasta dish.
This time of year, I love pasta salad with cooked chicken.

I get those rice and pasta side dish mixes and add either ground beef or chicken and they make delicious simple and cheap meals. I also am a member of mypoints.com where they have printable grocery coupons that make shopping a less fearful event.

Thanks, filamga. I've been around here for awhile now, and I am always finding both tips and recipes to use and try. I'm always amazed at how helpful people are.

Serving it up to your family can also make it feel more like a dining "experience" rather than just "having dinner." So it may be a tad extra work, but for the caloric and money savings, and making your family feel special, it's definitely worth it!

I have used so many of the wonderful tips here! Shopping the ads, coupons, buying only on sale, going out of my comfort zone to shop at stores lesser known to me for staples like Dollar General, Dollar Tree and Save A Lot. And taking advantage of Angel Food, that has been a wonderful experience and I would encourage all who need help stretching their dollar to take advantage of it.
I've had great success with all the tips!
Cutting the amount of meat in dishes has been very easy, anything I make using ground beef I can make with 1/2 a pound instead of a pound. Since there are only 3 of us, this even works for meatloaf since I make 3 individual ones. I cook up the whole pound, but serve only 1/2 and freeze the other portions.
One tip I would like to add is more of a mind trick than anything. I no longer put any food in serving bowls. I dish up the plates myself. And the food that is on the table, is only the food on my family's plates. If we are having a salad, I put their preferred dressing on it myself, if bread, I butter it and place it on the side of the plate. This has helped us by not only starting with a smaller serving than we might have dishd out, but also by not over indulging. Only a mind trick, and of course an old stand by diet one, but it's working for us and helping to pinch those pennies and eliminate waste.
Can't wait to read more ideas, we need all the help we can get!
