I do the same thing.... As a single person who loves to cook, I will usually make a pot of chili and have that for dinner and lunch the next day, but freeze the remaining to have in a couple of weeks and make a chili joe or chili mac or put it on nachos.

I've been terrible about making things in the crockpot lately, but with going back to oollege, I may have to get back to it so I can have dinner waiting for us when we get home.

Leftovers are Awesome!

I use any bits of leftover meat too make quesadilas. Just add a bit of cheese and salsa, the little bit of meat on a flour tortilla. Fold over and grill on a flat skillet (or you can use an electric frying pan or BBQ grill) It only takes a few minutes so watch them!

You can also mix it up a bit. Sometimes instead of salsa, I use a bottled BBQ sauce or a small amount of steak sauce or spagetti sauce, along with the cheese and leftover meat.

You can mix up the kinds of cheese used just make sure its a decent melting cheese.
This is a perfect way too use up things when you have just a little. Not enough for another meal. Be creative and tune it too YOUR tastes.

When I cook, I make enough to work for dinner one night and then one to two lunches.

I remember when I was younger and we NEVER saved leftovers. Now, I can't imagine throwing perfectly good food out!

I like to use leftovers to make my hubby's lunch. I usually try to put a spin on things so he doesn't have to have the same thing over again. Even if it means something as easy as putting Chicken Helper in a tortilla with salsa and sour cream, he loves it. Its a great way to deviate from the same ol' same ol' ham and cheese sandwiches, and a good way to save money and use up leftovers. Not to mention is a good way to find creative ideas! ;)

Leftovers are a great way to stretch the dollar! We throw out way too many leftovers! Doing a leftover night or planning leftovers into the cooking are great ways to avoid that! Now to just do it...=)

I have now started trying to plan leftovers into my menu rotations. Usually I only planned what I was going to cook for the week not considering the leftovers that would ensue. Now I try to plan so that leftovers from several meals will actually go together instead of being this weird combination of things that have to be eaten.

Hello everyone! Usually we don't have to worry about expired fridge contents because nothing lasts that long in our house, (haha), but if need be a left-over potluck does the trick to get extras eaten before they expire and it is usually our favorite meal! Everyone can eat what they feel like or they can have a little of everything!

I do a quick toss of anything expired or possibly bad on grocery day as well, but I do a more thorough purge the day before trash day. Since I only go grocery shopping every other week, this ensures I don't have anything remain in the fridge too long, makes cleaning a breeze, and gets anything that might start smelling into the trash and ready for pickup the next morning.

I do this weekly, too. If it can't be frozen for future use than it gets eaten rather than thrown out. I also keep my MIL in mind, sending some to her; they aren't leftovers, they're a good dinner. =D

I am very big on not throwing out leftovers, yet very bad on actually putting them to use! I try my best to go with the "end of the week" fridge clean out and you choose what you like, and I will get creative and use them up, ideas and hands on help is ALWAYS accepted, ALWAYS... Some very tasty dishes have resulted...

Great idea! My grandmother did this as a matter of practice. She saved every little thing and meticulously reheated and served leftovers until they were gone. When I lived with her in the summers, we might have five or six vegetables for dinner. I was expected to finish off at least one thing.

I, too, cleaned out the fridge each time I go shopping. My kids are too old to find your idea fun, but I bet this would be great for families with younger children.
