Sorry about your Cool Whip problem. Try this one. It's supposed to be for Christmas or Valentine's Day, but who doesn't like peppermint all the time.
Ingredients Graham Cracker Crust: 1 1/4 C. graham cracker crumbs, about 16 squares 2 tsp. sugar 1/4 C. melted butter
For filling: 24 large white marshmallows 1/2 C. milk 1 tsp. vanilla 1/8 tsp. salt 6 drops peppermint extract 6 drops red food coloring 1 C. chilled whipping cream 2 Tbs. crushed peppermint candy
Directions To make crust: Heat oven to 350 degrees. Mix crumbs, sugar and butter. Press mixture firmly against bottom and sides of an 8-inch pie plate. Bake for 10 minutes and cool.
To make filling: Heat marshmallows and milk in saucepan over low heat, stirring constantly, just until marshmallows have melted. Remove from heat and stir in vanilla, salt, peppermint extract and food coloring. Refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon. Beat whipping cream in chilled bowl until stiff. Stir marshmallow mixture until blended and fold into the whipped cream. Pour into crust, refrigerate for at least 12 hours. Just before serving, sprinkle with crushed candy.
Yield: 1 8-inch pie

Take a carton of heavy whipping cream, add 2 TBSP or so of sugar, beat until stiff. Way better than coolwhip w/out the chemicals!

FYI- Lemon juice and milk makes a homemade replacement for buttermilk- you won't get cheese, in case anyone tries it. There are more complex chemical reactions that need to occur for cheese to be made- specifically w/the whey/casien complexes and calcium binding. Specific enzymes are needed (often rennin/chymosin) for that process.

Yes. Lemon juice curdles milk. In fact, you can make your own cheese this way.
I think this is shylaboo's recipe for what I call a lemon ice box pie. It's delicious!! The lemon juice does, in fact curdle the milk (and maybe the cream cheese too) but its supposed to . Make sure you beat the cream cheese with an electric mixer until fluffy and then add the other ingredients and mix them well. Also, a teaspoon or so of lemon zest will give it a better lemon flavor.
The approximate proportions for a store-bought pie shell are:
16 ounces of cream cheese (usually 2 packages) 14 ounce can of condensed milk (that's the canned milk with sugar added -- don't use evaporated) 1 cup lemon juice -- make sure you use fresh 1t lemon zest
Shylaboo -- I think I'll make one this weekend. Thanks!

Nope. It's actually pretty good. I have a family of 4 and when I make this I have to make 2 at a time and they last all of 1 day.

Hi. I have a very simple recipe that I use with Graham Crust.
Mix together 1 thing of Philadelphia cream cheese, 1 can of condensed milk and 3/4 cup of lemon juice. Pour in crust and refrigerate till chilled and firm. Top with a can of your favorite pie filling and chill for about an hour.
