Hi Nikki,
I found this recipe for bread(not raisin) on the internet. It appears to me that you should be able to follow the instructions for baking your favorite raisin bread recipe and bake it in these 1 lb. coffee cans as well.
Try baking enough dough in 1 coffee can and see how it comes out, if it doesn't work well.....you can use the remainder of the dough in a loaf pan and bake as usual. May be worth a try. You didn't mention if this was a yeast bread recipe that you remember, or if this was more like a cake like bread.

This unique bread recipe is baked in coffee cans.
Prep Time: 20 minutes
Cook Time: 1 hours,
Ingredients:
2 pkg. active dry yeast
2 Tbsp. sugar
1 cup warm water (110 F.)
cornmeal
1 tsp. salt
5 cups all purpose flour
1 1/2 cup warm milk (110 F.)
1/2 tsp. baking soda dissolved in 1 Tbsp. water
Preparation:
In a large bowl: combine yeast and sugar in the water; let stand 15 minutes or until puffy.
Grease the insides of 3- 1 lb. coffee cans and the underside of their lids. Sprinkle cans with cornmeal, shaking off the excess.

With electric mixer, gradually beat salt, 3 cups flour and 1 cup milk to yeast mix; adding alternately and beating well.

Add 1/2 tsp. baking soda to 1 Tbsp. water and dissolve. Add this to the beaten mixture. Beat well.

With mixer or spoon, beat remaining 1/2 cup milk and about 1 1/2 to 2 cups flour to make a stiff dough that is too sticky to knead.

Spoon enough dough equally into cans, top with lids. Let rise in warm place until the lid pops off (about 45 to 60 minutes).

Carefully remove lids. Place cans upright on rack of 375 degree oven. Bake for 25 to 30 minutes, or until tops are browned and sides and bottom are golden.

Slide out of can to test. Take loaves out of cans and stand upright on wire rack to cool.

Store airtight and keep at room temperature or in the refrigerator for 4 days. Freeze for longer storage.

Slice in rounds and toast and serve. - Marlene, forum member

Hi Nikki,
My mother used to make brown bread in a coffee can, I remember this because first of all the bread was round and second of all, there were ridges in the bread from the ridges in the coffee can......Let me see if I might be able to find that recipe...no promises.

searching for a coconut cookie recipe

Posted: Dec 9, 2008 8:58 AM
I am searching for a Coconut cookie recipe that used to appear on the Bakers Coconut Angel Flake bag years ago, the recipe included cornstarch and flour along with butter and confectioners sugar...they were called something like "Angel Meltaways)
You rolled the dough into balls and then into coconut.

Hi Nikki and welcome! I did a quick Google search and came up with a few raisin bread recipes, but in tin cans, not coffee cans. Here was one that looked pretty good: Tin Can Raisin Bread.

If you dig a little deeper in Google, you might find one for a coffee can, though. But the tin can one seemed cute, like little single serving sizes.

Welcome to the Message Boards.

Is it possible you are thinking of brown bread with raisins? That is the only bread I know of that is traditionally (at least in my family) made in a coffee can. The texture is a little grainy and it is sweet because of the molasses in the recipe.
