A variation if you want to give it a try.
My recipe is half what was posted and I do it on the stove top; when it reaches a boil I remove from heat and add three large scoops of peanut butter.

It's *fudge*. If you don't want it, don't eat it. Why are even reading about Desserts if you think it's all about Diabetes?

That has to much sugar, sodium, carbohydrates, fats, cholesterol and everything else bad that I don't do any more. After all. It's all about Diabetes and how we get it, in more ways then just one. WE are all accountable for what we put in our mouths.

Microwave Fudge
3/4c. evaporated milk or light cream 1tbsp. butter or margarine 1-1/2c. sugar 16 marshmallows, cut in half 1(12 oz.) pkg. chocolate chips 1c. chopped nuts 1tsp. vanilla
Combine evaporated milk, butter, sugar and marshmallows in a 2-quart bowl. Microwave 3 minutes on high or until marshmallows puff and mixture begins to boil. Stir. Reduce setting. Microwave an additional 3 minutes on medium power (approximately 60%) or until mixture boils and sugar dissolves completely. Be careful mixture doesn't boil over. Stir in chocolate chips, nuts and vanilla. Beat until smooth. Spread in buttered 8x8 inch baking dish.Cool in refrigerator.Cut into squares.

I used to have a recipe for chocolate fudge you make in the microwave. It was so easy and good and now for the life of me I can't locate or remember it. Do any of you have this recipe by chance? Thanks in advance!
