I used to make one that had mayo in it, I haven't dug that out for years, might not even have it anymore. Anyone else have one?

I won't post the recipe because they can be found on almost every cook/bake site.
One is Crazy Cake made by sifting dry ingredients into a 9x13 greased pan, make 3 indentations and put oil, vinegar and vanilla into each indentation. Stir with a fork and bake.
The other is a Texas Cake, feeds a big crowd, good and chocklatey, baked in a 14 x 18 x 1" commercial pan. Both are easy great tasting cakes that are quick and easy.

I wasn't on this site yesterday but here is another easy chocolate cake recipe. This makes a small pan but you could probably double the recipe if you want a bigger pan of cake.

1 c. flour
1 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 c. unsweetened coco powder
1 c. hot water or brewed coffee
1 egg
1/4 c. melted butter
1/2 tsp. vanilla

In a mixing bowl, combine flour, sugar, baking soda and powder, coco powder, and hot water or coffee.

Add egg and butter and mix well.

Pour into a greased 8 by 8 pan and bake in a preheated 350 oven for 30 minutes.


I also have a recipe for chocolate cake that makes its own "pudding" layer on the bottom if anyone is interested.

Welcome to the community Katz. It doesn't look like anyone commented yesterday, but this is my favorite (and easy) chocolate cake. I know the recipe is somewhere around here but I couldn't find it right off the bat.

1 box chocolate fudge cake mix (can be devil's food or plain chocolate)
1 box instant chocolate fudge pudding
1 8 oz container of sour cream
4 eggs
1/3 cup oil
1 bag chocolate chips or chunks - small bag whatever that is.

Mix all the ingredients except chips until well blended, then fold in chocolate chips. Put in a greased and floured bundt pan and cook for about an hour at the temperature for the cake mix.

The chocolate chips and sour cream make this a very moist cake so it doesn't need frosting or glaze unless you really want it. I usually just dust with some powdered sugar.
