Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

I know this reply is a little late, and at the tail-end of zucchini season, but these bars are awesome! Reading the recipe you might think that the bars are rich, but that isn't the case at all. I got the recipe from my 87 year old Grandmother, who got it a million years ago from her friend in Minnesota.
Chocolate Zucchini Bars
1 C. Oil 1 3/4 C. Sugar 2 Eggs 1/2 C. Buttermilk 1 t. Vanilla
2 1/2 C. Flour 1 t. Baking soda 1/2 t. Baking powder 1/2 t. Salt 1/4 C. Cocoa 2 C. Grated Zucchini 1 1/2 C. Chocolate Chips 1/2 C. Chopped nuts (optional)
Pre-heat oven to 350 F. Lightly grease a 13 x 9 pan. Combine the dry ingredients in a medium bowl. Set aside. Beat the wet ingredients in a large bowl and stir in the dry ingredients. Gently add zucchini. Pour batter in baking pan and top with chocolate chips and nuts if desired. Bake 45 min.

I have a chocolate zucchini bar recipe that I will get for you. my kids are sleeping so I will post it tomorrow. But it is so good you would never know there is zucchini in it.

I searched around and found the following recipe. Sounds good!
BARS:
2 c. sugar 1 c. oil 3 eggs 2 c. flour 1 tsp. cinnamon 1 tsp. salt 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. vanilla 2 c. shredded, ungrated zucchini 1 sm. carrot, shredded 3/4 c. rolled oats 1 c. chopped hickory nuts OR walnuts
Beat together sugar, oil and eggs in large bowl or in food processor. Beat in flour, cinnamon, salt, baking soda and powder and vanilla. Beat 1-2 minutes until well mixed. Fold in zucchini, carrot, oats and nuts; mix well. Pour into 15x10x1 inch pan (jelly roll pan or cookie sheet with sides). Bake at 350 degrees for 15-20 minutes.
FROSTING:
1/2 c. soft butter 1/4 tsp. almond extract 2 tsp. vanilla 2 1/2 c. confectioners sugar 1 (3 oz.) pkg. cream cheese, softened
Make frosting by beating all ingredients together until smooth. Set aside. Cool bars; frost. Cut into bars. Yield: 3 dozen.

Zucchini Bars recipe anyone?

Does anyone have a recipe for zucchini bars? I have looked in all my cookbooks and have found cake and bread, but no bars. Someone brought them to work and my hubby had some and said they were good-but did he find out who made them? No. Just looking for some ideas. Thanks all!
