Hi Jane! Use your Butternut Squash in an Italian Risotto!

Roast the squash as usual, cool, peel, cube and mash w/ potato masher.
Make a traditional Italian Risotto, using the recipe that is usually found on the back of the package. Use 1 1/2 to 2 cups rice for this dish. For seasoning use 2 garlic cloves, minced and 3/4 to 1 tsp. finely chopped fresh thyme.

When the risotto rice has completed cooking, add 2 Tbsp. butter, 1/2 cup grated Parmigiano-Reggiano cheese, 1 1/2 cups mashed butternut squash, and 2 Tbsp. finely chopped flat-leaf parsley. Serve immediately. Makes enough for 4-6.

Serve with a tossed salad. This is pure Italian comfort food!

Jane,

After peeling the squash and cleaning it, I cubed the squash and put it in a cookie sheet pan and put garlic, olive oil, salt and pepper. Mix it up and bake at 375.

I have also made a butternut squash lasagne which is very good.

Butternut Squash

I bought two really beautiful butternut squash at the farmer's market yesterday. Does anyone have any suggestions for a good way to fix them?
