Ava Dart, the basics of a chicken casserole is chicken (of course!), some sort of starch (such as potatoes, rice, pasta, or other grain), veggies (usually including onions & garlic- often broccoli, mushrooms, peppers, etc... also) & then a cream sauce of some sort. That is where the canned soups have come in (resulting in an easy/fast sauce).

To make a healthy version:
Use lean chicken or other poultry (such as skinless breasts, tenderloins, etc...)
Use a high fiber starch (keep the peel on the potatoes, or use a whole grain)
Bump up the veggie content (try pureeing roasted red peppers into the sauce, and get creative w/the veggies you add- try adding artichokes, mushrooms, peppers and broccoli to the onion/garlic mixture)
Finally, just make your own low-fat sauce from scratch. White wine or chicken stock mixed with low-fat sour cream or cream cheese is fairly easy & quick to make. Or make a traditional white sauce using skim milk and wine for flavor.
If you want extra flavor and crunch on the top- top the casserole with a mixture of herbs, whole grain bread crumbs and a few tablespoons of a high flavor cheese such as asiago or parmesan.

Here's a little variation on the chicken spaghetti recipe. My sister's in-laws are from Texas and this was served at their rehearsal dinner. Enjoy!!

1 whole chicken, boiled and deboned
16 oz box of thin spaghetti
8 oz pkg shredded Mozzerella cheese
8 oz shredded Pepper Jack cheese
1 can cream of mushroom soup

Mix all ingredients in a 13x9 baking dish. I add a little chicken broth to add moisture. Bake at 350 degrees for 30 minutes or until heated through.

I can't imagine a chicken casserole with out a cheese product and cream of mushroom or cream of chicken soup. It just seems unAmerican to make it another way.

Here's the one I have which is delicious!

about 3 or 4 boneless skinless chicken breasts
spaghetti
mushrooms (one small can - can be omitted)
onion (I usually use the dried onion 1/4 cup or less)
bell pepper (I use those from dad in the little baggies - about 1/4 cup)
1 can cream of mushroom soup
1 can cream of chicken soup
1 small (I use the med for more cheese flavor) velvetta cheese

1) boil the chicken;
2) when chicken is done take it out to cool and cut in cubes and in the same water cook your spaghetti
3) sauté mushrooms, onion and bell pepper with butter
4) add to saute mixture cream of mushroom and cream of chicken and velvetta (cut in cubes for easier melting)
5) once your spaghetti is done add it to the sauté mixture with the chicken
6) bade for 20 minutes at 350

I have a recipe from a velveeta cookbook from the 90's. It is my favorite food and I cook this weekly! I love it!

Spicy chicken spaghetti

12oz uncooked spaghetti
4 boneless skinless chicken breasts, cut into chunks
1 pound velveeta
1 can cream of chicken soup
1 can rotel
1 can (4.5oz) sliced mushrooms
1/3 cup of milk

1. cook pasta
2. cook chicken. When chicken is cooked, add velveeta,milk, mushroom, soup, rotel, and stir until melted
3. add chicken mixture to pasta
4. spoon into 13x9 baking dish and bake for 35-40 min at 350 degrees.

If you go to the Rotel web-site, they have a Chicken Noodle Casserole, but I am not finding the spaghetti one, other than the one that the other jen wrote about.

My recipe calls for one cream of mushroom, one cream of chicken and one rotel. I also saute a package of seasonings blend (in the frozen vegetables isle) in 1/2 stick of butter and add to mine as well.
