I find that most of my comfort foods are side dishes I eat alone. Love a good bowl of mac 'n cheese.

Breakfast is both my husband's and his sister's comfort food. I like a weekend breakfast with all the trimmings, but for them, it's something over and above that.

Hi Ladies!
You said the right word for me when you said Comfort Food! It's what I do! I'm the Nashville Comfort Food Examiner for Examiner.com! But I am read nationwide so all of you can read my column! I'm so excited to find a thread about the topic that I SO love. I just started with Examiner a month ago today and have already published 25 or so articles. I have probably 10 in the oven, so to speak! All my recipes, tips, tricks and reviews center on Comfort Foods. (with the exception of a couple of Halloween articles: Chocolate Covered Insects Day and Chocolate Covered Ants Recipe) those were just for fun, fun to have in your recipe box too!

For my husband, comfort food = chicken and waffles.

He says mine isn't true Pennsylvania Dutch, but it's pretty easy, and he likes it. It's a great way to use up leftover chicken, but if I don't have any, I buy a rotissery chicken at the grocery store and use that.
Chicken and Waffles
chicken
1 can each, cream of chicken & cream of onion soup
a sprinkle of poultry seasoning
a bit of paprika
fresh, hot waffles
Tear chicken into bite sized pieces. Place in a skillet with soups, poultry seasoning and paprika. Heat and stir until good and hot. Serve over hot waffles like an open faced sandwich.

In cold months beef stroganoff served over egg noodles is a must! This is the recipe my mother used, and I can't get enough of it.
Beef Stroganoff
1/2 lb. fresh mushrooms, sliced
1 large onion, chopped
1/2 c. butter +
2 lb. beef (a nice chuck roast or whatever isn't too expensive)
2 c. beef boullion
flour
1 c. sour cream
I usually make this in a large electric frying pan, but any big skillet will do.
Cut beef into strips, about 2 1/2" long and 3/4" thick.
Saute mushrooms and onions in 2 Tbsp. butter and remove from the pan.
Melt 2 Tbsp. butter in the skillet. Coat beef strips in flour and brown in butter, turning until browned on all sides. This takes a while, because you can't do it all at once, you only want a single layer of beef in the skillet. I always need to add more butter, and take out the browned beef and add it to the mushrooms and onions, until all is done.
Return all beef to skillet and add boullion.
Simmer, stirring occassionally, for about 1 hour.
Add mushrooms and onions. Simmer for another 15 minutes.
Stir in sour cream.
Serve over egg noodles or rice.

Here's a simple recipe that I served when my son was a small boy on frosty fall nights. Brown a pound of ground beef, drain, stir in a can of your favorite vegetable beef or vegetable soup. Simmer for about 5 minutes until heated through and serve over cooked rice or mashed potatoes. Serve with corn bread muffins. For dessert, warm apple pie and cold milk. This meal fills their tummy, warms their body and they sleep sound all night. It's also very affordable.

Meals that warm up the kitchen as well as stomachs are certainly more appealing in the colder months. We still grill all year round but I tend to use the oven a LOT more.

One of the wonderful comfort foods of this time of year is pumpkin. Pumpkin pies are great all winter long, but its really special to be able to find good fresh cooking pumpkins this time of year.

At my house carbs=comfort :-D and now that fall has hit (live in NW Iowa and we had our first shot of snow Friday night) my fall comfort foods are stews, soups and chowders. Winter comforts seem to be more roasted meats and potatoes. AND Oreos and milk all year 'round :-D
