One of my favorite fall quick meals, is Corn Chowder, it is quick and oh so good!!! My husband and kids love it, it is a one pot wonder, no additions needed. Made in under a hour.....

I love all that are listed - here's another fall favorite of mine - Roasted root vegetables!
Peel & cut into chunks any 'root' vegetables you like - potatoes (white or sweet), corn, parsnip, onion, rutabagas, turnips, etc. Bit sized chunks of squash & apples work too,
Toss with olive oil, garlic & rosemary - or whatever seasoning you prefer.
Roast at 400 for 45-60 minutes.

I just made the best pot of homemade beef stew this past weekend! The gravy was so rich with the flavors of bay leaf and clove. Also, have a bread machine and made cottage/dill bread to go with the stew! Dessert was a simple baked apple! Divine! I'll serve the leftover stew tomorrow over noodles. I also make a wonderful chicken or turkey vegetable soup. I call it my 2 day soup as it takes 2 days to make it!  Some of my best cooking memories growing up during fall were baked steak/gravy w/ mashed potatoes and peas with pearl onions and mushrooms. Mama made the best bean soup that was chock full of grated carrots, celery and onions and ham and served with cheddar cheese muffins. Yum! Daddy was famous for his chili and baked/sausage stuffed onions! Wow! I was lucky as both my parents were great cooks! Variety was the spice of life in our house!

One of my favorite fall dishes to make is chicken and dumpling stew. Its so hearty and homey, but too warm for summertime. Can't wait!!

hi everyone, after church this evening some of us went out for pizza and we were talking about home made apple butter, I was reminded that there is a way to make it in the crock pot and the oven, dose anyone have the recipes and instructions to do it either way? Thanks, granna

Nothing fancy, but very yummy! You need to adjust the sugar for the type of apple - a very sweet apple needs less. Don't use really tart apples like Granny Smith. You'd have to add a lot of sugar. I like golden delicious and Fuji mixed.
8 apples - peeled, cored and chopped 1-1/2 cups water 1/2 cup sugar (or to taste) 1 teaspoon cinnamon
In a saucepan, combine apples, water, sugar, and cinnamon. Cover, and cook over medium heat, stirring occasionally, until apples are soft. When cool, mash with potato masher. (I like mine kind of chunky, so usually omit this step).

I had just been asking about banana bread!

That thread has some good recipes in it.
As for apple sauce, I haven't made it for years (my kids out grew it) but I know I used very little sugar and a lot of cinnamon. I'll see if I can dig out the recipe for you, but I'm sure others will be along to post some. =)

I always look forward to fall because I love making soups and stews! And I love the apples! I make homemade apple sauce - applesauce & biscuits for breakfast - yumm!
Oh, and how about caramel apples! My mouth is watering!

Ooops! For the topping size I listed I use 8-10 apples in a 7x9 pan. For a 9X13 double the mix and the apples.
With Mac apples it cooks down a bit and the apples are soft, plus I like the tart flavor for cooking.
