I think Michele McAdoo of Kraft Kitchens out-did herself here.

One-Dish Italian Fish

Prep Time: 5 min Total Time: 17 min Makes: 4 servings

What You Need

2 cups instant white rice, uncooked 1/2 cup water 1 lb. white fish fillets (halibut, cod or tilapia) 1 can (14-1/2 oz.) diced tomatoes, undrained 1/4 cup KRAFT Zesty Italian Dressing 1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese Make It MIX rice and water in 1-1/2 qt. microwaveable casserole. Place fish in single layer over rice; top with tomatoes and dressing. Cover.

MICROWAVE on HIGH 10 min.; top with cheese.

MICROWAVE, uncovered, 2 min. or until fish flakes easily with fork and rice is tender.

I saw this recipe in my Redbook magazine. I haven't cooked it yet. Have you? It does sounds delicious! Thanks for sharing.

Fresh Salmon Tacos

Spicy skillet-browned salmon and zesty Santa Fe corn salsa make for a guilt-free taco night anytime.

Santa Fe Salsa

Ingredients

1 can(s) (11 ounce) mexi corn, drained
1 cup(s) cherry tomatoes, halved or quartered
1/2 cup(s) black beans, rinced, drained
1/2 cup(s) shredded carrots
1/2 cup(s) green chile salsa
1/4 cup(s) diced red onion
2 tablespoon(s) chopped fresh cilantro
Salmon

2 (about 1 1/2 pounds) salmon steaks, 1-inch thick
1 tablespoon(s) jalapeno and lime flavored olive oil, or any favorite flavored or plain olive oil
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
8 taco shells

Directions

In a medium bowl, combine the salsa ingredients; set aside.
Heat a large nonstick skillet over medium-high heat. Brush oil over salmon steaks; sprinkle with salt and pepper.
Cook salmon in skillet 3 to 4 minutes per side, for medium-rare. Remove from heat; let cool slightly then break up into chunks.
Spoon salmon into taco shells, dividing evenly; top with corn salsa. Garnish with lettuce.
