I use a meat hammer on mine then soak it in honey Dijon dressing until grilling. The flavor spreads all through.

Camping, the foil packets work very well.
Use nonstick foil, place the chicken breast, fresh or frozen vegetables and sauce. Wrap the foil into packets and place packets in a ziploc bag. This lets you prepare before you leave home, preventing any cross contamination and transport without water getting into packets. These are great with Zesty Italian, Teriyaki, or any favorite bottled sauce. While they are packed the sauces marinade the chicken. Cook indirectly of the coals approximately 45 mins for a regular 4 oz chicken breast.

Season with salt, pepper, garlic powder, grill until cooked & then brush on bbq sauce.
Also have tried many salad dressings but I won't put anything with a high sugar content on the grill because it burns. I will brush with the flavoring after.
I also like to marinade with fresh citrus, salt, pepper, garlic powder & grill seasoning (dry).

Marinate them...I've used everything from Italian, Balsamic & Caesar dressings, to soy sauce w/garlic, and the Lawrys Marinades are really good!

We usually just marinate the chicken breasts in a beer and a little soy sauce. When we take them out of the marinade we sprinkle with some kind of spicy herb blend and grill until done. You can also season the skinless breast portions and wrap them in foil along with veggies and grill the packets. We do that a lot, too and it keeps the chicken from drying out. It's just harder to determine how done they are.
