That sounds amazing!

I don't have any ideas, as I'm usually pretty conservative about how much food I make, but some of the suggestions on here are so great, I may HAVE to make extra next time just so I can try them lol

Why did you make so much?

I'd probably put it all in a crockpot with a can of mushroom soup and serve it over noodles.

You could also do one of the breakfast skillet things. Throw in eggs, potatoes, and cheese! Sounds good to me!!!

oh it's awesome, pretty much ANY leftovers can become fried rice and my 5 year old will eat it, no problem!!!!

That does sound good. I never think of making fried rice, but I often have all the ingredients.

I usually make chicken and beef fried rice whenever I have fajita left over, even though the seasoning is not the same, by the time you add some ginger and soy sauce to the rice with some egg and veggies, it comes out very good

I can sympathize. It's really hard NOT to grill a ton if you are doing both. Welcome to the neighborhood. Quesadillas is a great suggestion, because they can be tailored to an individual's personal taste.

One thing I've found when I'm serving fajitas as leftovers, is that I don't have very good luck with using the microwave to reheat the meat. I prefer doing a quick stir fry in a little EVOO, with or without a tiny bit of red wine, and an extra shake or two of Southwestern seasoning to perk it all back up.

When I have fajita meat I usually make some penne pasta, top it with a bottle of Kraft alfredo sauce and throw in the chicken or beef and serve. I call it spicy chicken pasta and my husban and girls love it. You can also do stir fry. Broccoli and carrots along with the beef or chicken and a package of kikoman stir fry sauce. Of course stir fry the veggies first in some oil, add the beef to warm and then add the package of powder to water and soy sauce pur and stir fry until the sauce thickens. Serve over rice. I hope this helps.

Ok, Ok, Ok.... minimize the fact that I AM shy (that may just work to my advantage, thanks may be due - YET to be determined!) ANYWAY, might I just chime back in for a moment & express my opposition to the whole "freeze" thing. I freeze things all the time, grand idea, great food preserver, stellar meal ahead planner. HOWEVER, there MUST also be the follow-up process of DE-Frosting & time management of such & RE-use recipes. THAT is where I fall short. I'm just suggesting that if freezing is the topic, a follow-up idea might be in order.... That's all I'm saying.

Anyone else having a problem seeing tamire as shy? OHME! LOL You're fun. =)

I'd go with the freezing it and using it in recipes along the way.

Welcome to the Message Boards, keegirl.

How about a "Taco" Soup made with the leftover meat instead of ground beef? (And, of course, you wouldn't need to use the taco seasoning in it.) I'd love to have enough fajita meat left to try that myself. I have enough left from our fajitas tonight so I can have a fajita tomorrow... :)

Dear "Lurker" (I LOVE that!, I "lurked" for months before getting up the hoots to dive in...:-p)
Anyway, how about taking all that beef & chicken & peppers & onions & cheese and mixing it up in some rice. If all that's left is the beef & chicken, how about rice & meat and some stock w/frozen peas &/or corn &/or carrots &/or broccoli &/or whatever you have/like. A shot of soy or worchestshire or teriyaki or BBQ sauce... Sorry, concocting things from leftover "stuff" is almost my favorite thing in life...

Try quesadillas - stuff tortillas w/cheese and the good stuff then melt it all together! Then I would freeze the rest.

You could just throw some of it into a soup or stew. That's what I like to do with my lefft over fajita meat. It's already seasoned so it gives a nice flavor to the soup.

I agree. I alwasy like freezing my leftovers. It will keep in the freezer for a couple of months... Or you could bring the meat over to my house! I love fajitas!!
