We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

This is our favorite party salad recipe.
Confetti Rice Salad - serves 18
6 cups cooked Jasmine rice, cooled and chilled 1 red bell pepper, chopped 1 green bell pepper, chopped one bunch (about 6 or so) green onions, chopped 1 cup chopped red onion 2 cans (around 18 oz) black beans, rinsed and drained 3 celery stalks, chopped 3 carrots, peeled and grated 1 cup raisins or currants 1 cup slivered almonds
Dressing: 1 cup olive oil 3/4 cup red wine vinegar Juice from one lemon 1/2 tsp. salt 1/4 tsp freshly ground black pepper 1/4 tsp garlic powder 1 tsp dried tarragon 1 tbsp sugar
Mix ingredients and dressing well and refrigerate overnight. Serve chilled or at room temperature.

I really like this one. It's full of veggies and can be served cold.
Ingredients 2 Tbs. extra virgin olive oil 1 small eggplant, about 5 oz., thinly sliced 1 large Vidalia or other sweet onion, halved and thinly sliced 1 medium zucchini, thinly sliced 1 medium yellow summer squash, thinly sliced 3 fresh garlic cloves, chopped 1/2 C. jarred roasted red bell peppers 1/2 C. jarred roasted yellow bell peppers* 2 Tbs. chopped fresh basil, or 1 1/2 tsp. dried Pinch of cayenne pepper (optional) 2 Tbs. tomato paste Salt and ground black pepper, to taste 1 C. grape tomatoes, cut in half and seeded
Directions Place the oil in a large skilled. Add the eggplant, onion, zucchini and squash over medium-high heat and saute for 7 minutes, stirring often. Add the garlic, roasted red and yellow peppers, basil, cayenne pepper (if desired), tomato paste, salt, pepper and tomatoes. Cover and cook for 20 minutes on medium-low heat, stirring frequently. Transfer to a large container with a lid and allow the ratatouille to cool to room temperature, if desired. It can be refrigerated for up to 3 days. Bring ratatouille to room temperature before serving. It tastes best when cooked the day before serving.

SANGRIA... serves 2 1/2 mag of your favorite cabernet or merlot 1/2c oj 1/4 cup cran juice 1/4 cup pineapple juice 4 tsp sugar combine all ingredients and shake the hell out of it.!!! and serve it into 2 cold pilsner glasses with a pineapple wedge for a garnish. its been about 10 years since i have been behind a bar, but thats the way i made 'em, and thats the way i like 'em!!

Chef Lee is so smart she didn't need no more than too weeks, ever heard of appruntiship? She'd done been cooking all her life, that Cardin Bleu just fast trakked her right on thru I bet!

She did indeed attend Le Cordon Bleu, but only for 2 weeks. She didn't complete the course therefore did not receive any certifications or degrees. That is probably the reason she didn't include this info on her personal website. So, she isn't a chef after all. She believes in "70% store-bought/ready-made products accompanied by 30% fresh and creative touches allow anyone to take 100% of the credit for an incredible result." Sounds like she should work for Kraft, quick & easy recipes.

umm kellyyyyyy yes she did. You never saw her Sandra LEe Chefography, did you. She went to Le Cordon Blue cook school in France.

Sorry but Sandra Lee did not go to "chef school" in Paris, she went to the University of Wisconsin, she is not a professional chef. She just isn't. Go to her homepage on http://www.semihomemade.com it tells you right there that she never went to culinary school.

It is sooo easy and quick. I dont use the spag. sauce with the chucky vegies because they take up too much room in the egg roll shell because you cant fit a lot into one. I am actually going to make them for dinner tomorrow night. I love them.

My mom use to fix us this quick dinner. Lasagna Rolls and chef salad Brown Hamburger meat mix Mont.Jack cheese Spag. Sauce of your choice roll up into egg roll papers then put them in a little fryer like a fry daddy or something. They come out very crunchy and very good. My son loves them.

Here ya go midnightmetal, this is a greek salad from Kraft. If you can't get to this recipe by clicking on the link, just type "easy greek salad" in the recipe finder on this website. The full name is Easy Tomato & Cucumber Greek Salad. IT IS WONDERFUL! I still plan on trying the other 2 though. I'll let you know what I think. Gotta wait for fresh veggies first!

I've even eaten the seeds, they are not spicy. They don't really have a flavor.
