I make something called a summer salad. It has broccoli, cauliflower, black olives, green olives, chunks of a white cheese; monetary jack/mozzarella, chunks of cheddar cheese, chunks of summer sausage. Mix all and top w/ Italian dressing. Something different...

It is a foregone conclusion that by the time tomatoes are plentiful in our garden, the lettuce has bolted, so I often make marinated vegetable salads. They're great because I can use a little bit of this and a little bit of that -- what's ever ready to pick.

This recipe may have already been suggested, but I'll chance it. This site has a fabulous cold Broccoli Salad. I think it is called Tangy Broccoli Salad? Made with a small amount of Miracle Whip, lemon, toasted sunflower seeds, bacon bits (which I omit), etc. It is such a twist on the usual side dishes, especially as we approach the warmer months. I couldn't believe how my family loved it!

I haven't tried them all. The stir-fry with ginger was something I had never even considered, and it was really good. The Asiago sauce was a bit strong, and I didn't think the kids would like it, but they did. They seemed to like the lemony sauce pretty well too. The roasted garlic was too crispy, it actually seemed harder than raw broccoli, so I think I did it wrong. Still haven't tried the batter fried florets, but keep buying broccoli with that intent. I'll let you know how that turns out.

Hi. Yes, Deanna, use standard rice and not instant. Hope you enjoy. If a little too thick, a little extra water can be added. I just kinda throw this all together. I came up with this when my son was young as it was one of a few veggies he would eat, and it was a one dish meal with a salad or his favorite, corn. ldbayou

That sounds delicious. I've printed it off for when our garden veggies start coming in. I bet it's real good with fresh broccoli. You didn't say, but I'm guessing it's for real rice, not minute rice, correct?

Hi Freki, how about 2 more recipes?
Broccoli Cheese Soup
1 large chopped onion 1/2 stick butter 2 cans cream of celery soup( low fat is ok) 1 can cream of chickn soup(low fat is ok) 2 large bags of frozen cut broccoli-steamed in Microwave 1 # velveeta cheese, cut into small chunks 1 soup can low fat milk, (1 can water if too thick)
In large pot, sautee onion in butter. Add the remainder and bring to a simmer over low heat. Stirring frequently. Simmer for 15 to 20 minutes stirring frequently. And water if necessary. I like a sprinkle of garlic powder added in with the onion and the butter.
Chicken-Broccoli-Rice
2-3 boneless,skinless chicken breasts cut into bite-size pieces 4 Tablespoons butter 1 clove minced garlic 1/2 chopped onion 1 cup uncooked rice 1 can broccoli cheese soup 1 &1/2 cans water 1 large pkg frozen cut broccoli 1 can sliced mushrooms(optional) 1/2 # velveeta cheese(optional)

I actually do a stir fry with fresh ginger, lemon zest and garlic. It's light tasty and different! I also use a light oil that can withstand high heat...

Just got this from my meal mail: Campbell's® Chicken Broccoli Twist Prep Time: 10 min. Cook Time: 20 min. 3 cups uncooked corkscrew-shaped pasta 2 cups broccoli flowerets 2 medium carrots, sliced (about 1 cup) 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Broccoli Soup 1 3/4 cups Swanson® Chicken Stock 1 tsp. garlic powder 1/4 tsp. ground black pepper 2 cans (4.5 ounces each) Swanson® Premium Chunk Chicken Breast in Water, drained 1/4 cup grated Parmesan cheese
Directions: Prepare the pasta according to the package directions in a 3-quart saucepan, without salt. Add the broccoli and carrots for the last 5 minutes of the cooking time. Drain the pasta and vegetables well in a colander. Return the pasta and vegetables to the saucepan.
Stir the soup, stock, garlic powder, black pepper and chicken in the saucepan. Cook over medium heat until the mixture is hot and bubbling. Sprinkle with the cheese.
Serving Suggestion: Serve with Romaine salad tossed with fresh chopped basil and Italian salad dressing. For dessert serve vanilla yogurt.
Cost per recipe: $9.77 Cost per recipe serving: $1.95
Total cost of meal (including serving suggestion): $14.91

It's more like a casserole. Got the recipe from my cousin. 1 pkg frozen broccoli 1 medium onion chopped 1 1/4 cup rice 1 can crm of mushroom soup 1 small jar of cheez whiz 3/4 stick of butter Mix all together. Bake in 2 quart casserole 35 to 40 minutes in 350 oven.

freki ~ Here's the cauliflower recipe..
1 1/2 c. (6 oz) cauliflower florets 2 t. grated parm (reduced fat works as well) 1 t. chopped fresh parsley 1/4 t. garlic powder 1/4 t. ground black pepper salt, to taste 1 t. extra virgin olive oil
Preheat oven to 425. In a med. bowl, combine cauliflower, cheese, parsley, garlic, and pepper. Season with salt. Toss to mix. Drizzle on oil, toss again. Transfer the mixture to a small nonstick baking dish. Bake for 15 - 17 minutes, tossing once, or until lightly browned and crisp-tender. --- I like to steam my cauliflower a bit beforehand, only because I like my veggies really tender. If you do this, make sure the cauliflower is cooled sufficiently before tossing with the cheese, or you'll have a gooey mess. I'm not talking from experience or anything.. This is a single serving recipe. If you follow it using low-fat parm its only 104 calories.
