Eggplant is in season right now, and so delish! With a quick marinara sauce as a main dish - you won't even miss the meat. Slice medium size eggplant into rounds, don't peel first. Sprinkle each slice with a little salt and put on a cookie sheet with papertowels under and over the eggplant. Let sit for about an hour - this takes out extra moisture. Dip in egg and milk mixture, then in seasoned breadcrumbs. Fry until golden brown in olive oil/canola combo. Best to drain on brown paper bags (keeps the breadcrumbs crispier). Eggplant goes in a shallow casserole dish slightly overlapped, put jarred or homemade marinara sauce on top, and slices of Kraft provolone on top. Bake at 425 for about 25-30 minutes. Serve with parmesan or romano on the side and good bread for dipping in the extra sauce!

One of my absolute favorite dishes is pretty soft and always delicious!
It's a broccoli and chicken curry casserole
-2 lrg. chicken breasts (you can add more, but i like more broccoli than chicken) -2 good-sized bunches of broccoli -1 can cream of mushroom -mayo -curry powder, to taste (i like A LOT) -Italian breadcrumbs -cooked rice to serve on the side
-Cook the chicken however you want (i usually use my forman - or buy pre-cooked chicken) cut into small pieces and set aside.
-Meanwhile, steam the broccoli (you can steam it to the point where it's pretty mushy when mixed)
-Combine cooked chicken, broccoli, soup, mayo, and curry powder. Mix well. (I just eyeball the mayo until I like the consistency). Pour into 9x9 baking dish and bake at 350 for about 25 min.
-While it's cooking, melt butter in a small frying pan and add breadcrumbs and mix until they're coated in butter and slightly browned.
-After casserole is bubbly (about 25 min) top with breadcrumbs for another 5 min. Enjoy served over rice!
-YUMMMMM!!
I've also made this without the chicken and I almost prefer it that way!

Oh Me.... I had some dental work a few months ago and I can tell you that my local Italian restaurant was MY very best friend... Their take-out lasagna got me thru many days... I was even happy w/ their crusty bread after I let it soak up all the "juice" from the lasagna... My best friend for a good week or so... My other staple was scrambled eggs, I have always loved them so that was not a hard transition... Hope that you are all better by the time you see this post...

When I had oral surgery the nurses recommended scrambled eggs and soft white bread, chicken n rice soup, small pasta like elbows or orzo with plain marinara sauce, tuna fish with just mayo on white bread. I hope this helps and hope you are feeling better soon. Reader1

Peanut butter and banana slices are a nice soft breakfast or snack and loaded with protein.

This recipe sounds great! Were the dumplings premade? I'm always looking for things to cook in the crockpot and this sounds like a winner.

Hi, Hope you're feeling better soon! My kids used to love poor man's beef strogonoff. 1.5# browned drained ground beef 1 8oz pkg cream cheese(I like nuechatel, lower in fat) 1 can cream mushroom soup water added to make creamy texture. mix well in sauce pan till bubbly then pour over wide noodles.

Omelets are pretty versatile and soft. Try filling them with a variety of soft cheeses and cooked veggies cut into small pieces. They are also a good source of protein.
