Sounds like far too much "fussiness" for my style cooking...

I personally haven't made it- but the idea (Nachos on waffle fries) is popular at many restaurants around here. A local Brewery in particular makes an excellent version. One of my favorite apps. I'm sure this recipe would be a favorite- especially this time of year, with football parties, etc...

It's an interesting recipe, but I think I like my nachos better on blue corn tortilla chips.

Halloween is one holiday where this commands the kitchen if you like this kind of stuff.
Oozing Potatoes
The ingredients in this recipe are mainstays in many kitchens, and it's cost-conscious, quick, and easy to make. Basically, you're topping crunchy waffle fries with some black beans, sour cream and olives and turning it all into the perfect finger food.
Serves: 4
Total Time: 33 min
Prep Time: 15 min
Cook Time: 18 min
Oven Temp: 400
Ingredients
1/2 bag(s) (22-ounce) frozen waffle fries, Ore-Ida 1 can(s) (16-ounce) refried black beans, Rosarita 1 cup(s) Mexican cheese blend, Kraft 1/2 cup(s) mild chunky salsa, Pace 1/2 cup(s) dairy sour cream,Knudsen 1 can(s) (2 1/4-ounce) sliced black olives, Early California, drained
Directions
Preheat oven to 400 degrees. Line a baking sheet with foil; set aside. Arrange waffle fries in a single layer on prepared baking sheet. Bake for 18 to 20 minutes. Meanwhile, in a microwave-safe bowl, microwave black beans on high heat setting (100 percent power) for 4 to 6 minutes. To assemble, evenly space waffle fries on a microwave-safe plate. Top each with 1 tablespoon beans and a sprinkle of cheese. Microwave on high heat setting (100 percent power) for 1 minute or until cheese is melted. Top each stack with 1 teaspoon salsa, 1 teaspoon sour cream, and an olive slice.
