At my house we ealways have Baked Potato Soup...
1 T butter 1 large onion, diced 3-4 large potatoes, peeled & diced 1 qt. chicken stock 2 T vinegar 2 c. milk 3 T flour 1/2 c. sour cream 1/2 c shredded cheese 1/2 bag of real bacon bits
Heat butter in stock pot, sautee onion till translucent. Add potatoes and enough chicken stock to cover. Add vinegar and bring to a boil. Boil until potatoes are tender and breaking down (the purpose of the vinegar!) and stir occasionally. Add milk and flour to thicken. If potatoes are not your desired consistancy feel free to mash with a potato masher. Add sour cream, cheese and bacon bits. Serve topped with your choice of garnishes- at our house that is sour cream, more cheese, bacon bits & green onion if we have it. Also add salt & pepper to your liking.
Enjoy!!

5 lb. potatoes 2 cans chicken both mild/med salsa small Velveeta block 1 t. garlic powder
Cut and cook potatoes in the chicken broth, when done, add garlic powder, 1/2 jar salsa and Velveeta cut into chunks. Cook until cheese is melted and well blended. Depending on the size of your potatoes, you may want to mash them a bit to thicken. My family loves this, and its so easy to make.

I just made this recipe for the first time last week and its really yummy! It is also a creamed potato soup recipe, but different from the one below.
4-5 medium potatoes chunked 1 lg. onion diced 2 carrots diced 2 celery stalks diced 3 strips bacon chopped 4 c. water milk bacon butter to taste salt and pepper to taste shredded cheddar garnish
Place 1st 6 ingredients in pot and boil uncovered until well (an it really means WELL, think very mushy.) cooked and water has been reduced. Put soup in food processor and puree. Return to pot. Add milk until desired consistency. Add butter, salt and pepper to taste. Do not boil. Laddle into servings bowls and garnish with cheese and crumbled bacon.
Super good with some crusty bread on a chilly night!

There are quite a few potato soup recipes in the Kraft recipe search. My favorite is the loaded "Baked Potato" Soup.

Hi blessedmommy, How are your children and that new baby, from last year, I think? , doing? I love potato soup, I have been told that mine is really cream of potato soup. I start with 2 stocks of celery & 1 small onion chopped fine, in enough water to cover by about 2 inches, start that cooking first, then peel 5 potatoes, cut into small pieces and put them in the water to cook, while they are cooking peel 5 more potatoes and cut them into small pieces and add to the pot. If you need, add enough water to just cover them, add salt & pepper to taste, When they are cooked, the first potatoes will be very soft, so that you can mash all with a potato masher,it will have small chunks from the last batch of potatoes, then add 1 can of evaporated milk and 1 stick of butter/margarne. a little garlic powder, parsley, and thyme. Then bring back to a boil and simmer for about 10 minutes. Let me know if you tried it and what ypour son thought. annaskf
