My favorite corn bake is
1 3/4 cups frozen corn or 2 cans green giant white shoepeg corn 4 oz Cream cheese 2 tbsp butter 2 tbsp Canned chopped green chiles 1sm garlic clove, minced optional 1/2 tsp salt dash pepper
Combine all ingredients pour in a 3 cup baking dish. Bake uncovered 350 degrees for 25-30 minutes or until bubbly around edges.
I usually double this dish it's a great hit for everyone.

Oh Kopperhead what is with the attitude? I am the one who originally asked for the scalloped corn recipes regardless of nutrition value. As one put on here already, a little indulgence once in a while (like for a holiday) is just fine. I hope all of you have a great Thanksgiving and I thank you for the delicious recipe ideas!

We all have our opinions.
Mine is that these recipes for canned corn and krap sound awful. Sorry if you do not agree.
I'm not a health nut but eating that kind of thing is definitely not good for you. And that's fact, not opinion.

your right. some of the same people are posting only negative thoughts on these threads. noone asked them to sit at their table. hopefully, noone will.
on a more positive thought, all of these recipes sound delicious and i am going to try one of them for xmas seeing as i have already finished my thanksgiving shopping. ging to the store will be HECTIC enough the next couple of days. and i have enough cooking to last me the next couple.

I wish all of you nay sayers a Happy Thanksgiving, with your sour attitudes you may need our good wishes.
My Mother used to make scalloped corn and my daughter has it as one of her favorite memories. Her memories of her Grandmother's scalloped corn are what brought me here looking to recreate that for our Daughter. This may not be the most healthful dish but it does taste wonderful. I had found it several months ago and made it for a family dinner at our Daughter's home and her family all loved it and have made a special request that we bring it for Thanksgiving dinner.
Memories, good food and most of all family are what brought most of us to this thread. To all of you sharing your recipes many thanks. Here is hoping that all of you share in a wonderful day this Thursday with your family and a great tasting scalloped corn side which ever version sounds like the memory that brought you here. P.S. The version that most seems like my memory of Mom's casserole is: Baked Scalloped Corn
1 can Whole kernel corn (17 oz size) 1 can Cream-style corn (17 oz size) 1/4 cup Milk 1/4 cup Crushed buttery crackers (e.g. Ritz you can use saltines) 1/4 cup Onion -- chopped 2 Eggs -- beaten 1/4 teaspoon Salt 1/4 teaspoon Pepper 1 tablespoon Butter or margarine Directions: Combine first 8 ingredients, mixing well. Pour into a greased 1-1/2 quart casserole. Dot top with butter.
Bake, uncovered, at 350 for 40-45 minutes or until center is almost set. Let stand 5 minutes before serving.

I have a recipe that I took to a Redhat outting and the ladies loved it. Here you go...let me know what you think!
Special Creamed Corn *
1/3 cup butter 1/3 cup all-purpose flour 1 cup heavy whipping cream 1 cup milk 1/4 cup sugar 1 teaspoon salt Dash white pepper 5 cups frozen corn, thawed 1/4 cup grated Parmesan cheese
In a saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add cream, milk, sugar, salt and pepper. Bring to a boil; boil and stir for 2 minutes. Add corn; heat through. Transfer to an ungreased 1-1/2-qt. broiler-proof dish. Sprinkle with Parmesan cheese. broil 5 in. from the heat for 3-5 minutes or until lightly browned and bubbly.
Yield: 6-8 servings.

I make something similar, but I also add a can of cream of mushroom soup to make it extra creamy.
I should also add that I cook mine in the slow cooker for several hours.

I wish I could take credit for this delicious recipes, however I found it in one of the Taste of Home magazines several years ago. I have been making this for our Thanksgiving dinners ever since. My family "expects' this to be severd. All love it, even picky eaters.
Cheesy Creamed Corn
3 (16 oz) pkgs frozen corn 1 ( 8oz) pkg cream cheese - cubed 1 ( 3oz) pkg cream cheese - cubed 1/4 cup butter (or margarine) - cubed 3 tbs water 3 tbs milk 2 tbs sugar 6 slices American Cheese (I add salt & pepper to taste)
Combine all ingredients in a slow cooker, mix well.
Cover and cook on low for 4 hours or until heated through and cheeses are melted. Stir well before serving.

Corn pudding
1/3 stick of margarine 1 scant cup of milk Warm together in microwave to melt marg.
Next blend in: 2 T sugar 2 heaping T flour Mix and then add 3 cups frozen corn and 1 beaten egg.
Place in a greased 1 1/2 to 2 qt. casserole. Bake at 350 degrees for 45 minutes to 1 hour or until a knife comes out clean.
This can be made with soy milk and lactose-free margarine and tastes the same. My daughter is allergic to dairy.
Hope this is what you want. We eat this every year at Thanksgiving.

Corn Casserole
2 eggs beaten 1 can creamed corn 1 can whole corn-don't drain 1/4 C. melted butter 1 box Jiffy corn muffin mix
Mix all well. Bake in buttered 2 qt. casserole dish in 375 degree oven for 60 min. Enjoy!

CREAMED CORN WITH GREEN CHILES
7 cups corn, fresh or frozen 4 green chiles, sliced (BTW, I usually end up increasing by 1 or 2 depending on the heat of the crop, but we like a lot of heat) 3/4 cup Swiss cheese, cubed 1 onion, chopped 1 clove garlic, minced 4 T butter salt and pepper to taste
Heat butter and saute chopped onion and garlic until tender. Add corn, chiles, Swiss cheese, salt and pepper. Cook over low heat, stirring often, for 30 minutes. Serves 4.
Nothing could be simpler! If you can't find roasted green chiles in your area, this recipe originally called for 4 pobalno chiles but I always have greens in my freezer and they're my favs.
I remembered another corn and green chile recipe that doesn't have any fat to speak of as it's really just those 2 ingredients. I'll go ahead and post it here as well in case anyone is interested. This is the one I make when I'm just whipping up a quick corn side dish.
CORN AND GREEN CHILE
3 cups corn 3T cooking oil ( I use an oil mister now and less oil) 2 to 4 green chiles, chopped 1 clove garlic, minced 3/4 t salt pepper to taste (I prefer a fresh 4 peppercorn blend)
Heat oil in skillet and add corn, chiles, and garlic. Cover and cook slowly until corn is tender, about 10 to 15 minutes.
Add seasonings. If the corn is too dry, add several tablespoons of boiling water while cooking. Serves 6.
