I"m making this one tomorrow: Veg Barley Soup 1/2 lb lean ground beef 1 clove garlic, minced 7 c water 1 14 1/2 oz unsalted diced tomatoes 1/2 c medium barley, uncooked 20 oz bag frozen soup veggies 2 beef bouillon cubes 1/2 tsp dried basil 1 bay leaf
In dutch oven, brown beef, Drain, Stir in remaining ingredients except frozen veg. Cover; bring to a boil. Reduce heat; simmer 1 hour, stirring occasionally. Add frozen begetables; cook 10-15 min or until veg are tender. Add more water if soup becomes too thick.

I use to do brocoli soup...
150g of brocolli 20g of butter 100g of complete potatoes 250ml water 350ml low fat milk 1 slice of low fat american cheese salt
Chop the potatoes with just 100g of brocolli. Boil them very well, and drop the water, so that the brocolli and potatoe can dry. Now let that boil once again but with the other ingredients, and ready!!
They key is on using small potatoes and

Potato Soup Boil 6 c. potatoes in chicken broth along with some carrot and green onion until tender. In the mean time fry 1 lb bacon and crumble. Add 6 c. whole milk mixed with 6 tsp. flour to broth mixture. (I add some cut up pre-cooked ham chunks at this time too) Simmer till thickened, add ham, bacon and a handful of shredded cheddar cheese, salt and pepper if needed. Very good!

That looks like it would also be a good tomato sauce for pasta!

Stouf, thanks for the great recipe. You know, there's a great Tex-Mex version of tomato soup as well, if you're interested. 
SOUTHWEST TOMATO SOUP
3 cups tomato juice 1 6 ounce can tomato paste 1 onion, diced 2 slices bacon, chopped 1/8 tsp baking soda 1 cup half and half 1 jalapeno pepper, diced salt and freshly ground pepper
In a medium saucepan, cook bacon and onion until onion becomes tender. Add tomato juice, tomato paste, baking soda and salt and pepper to taste. Simmer over very low heat for 10 minutes then add half and half. Stir and cook until soup just becomes hot, do not bring soup to a boil. Garnish with diced jalapeno pepper.
I usually add green chiles or jalapenos right into the soup as it cooks. It's also great with a shot of hot sauce, like Tobasco or Cholula, thrown in. It's simple, not far off a basic tomato soup, but it's worth it.

I actually just posted this to another site recently... My grandmother used to make this all the time. So easy and yummy!!
Clam Chowder
1 onion 1 can Cream of Celery soup 1 can Cream or Potato soup 1 can of milk 1 or 2 can clams, drained 1/8 tsp parley flakes dash paprika 1/8 tsp pepper
1. Chop the onion and saute it in butter in your soup pot. 2. Add everything else

I make my own cream of potaote soup. I cut and fry bacon, drain most of the grease then add already diced and cooked potatoes and add half and half spice it up if you want to with seasonings of your choice. let it simmer for a couple minutes stirring constantly and then serve. Its quick, easy and tastes great.
