So, I have to give kudos to my new favorite cookbook... "Dinner Survival" by Sandi Richard. The book has 10 weeks (5 nights each week) of dinners. And grocery lists in the back of the book for each week. All the meals take about 30 or 60 minutes to complete. My husband and I are on week 2 and we're loving it! We've mixed around some of the recipes but it is so much easier. Last night we had a pork loin roast, baby potatoes with rosemary and steamed aspargus. Delicious! Another plus,,,everything has been easy clean up.

We had marinated beef with rice and green beans. I marinate beef (london broil cut into bite size pieces or stew beef) in soy sauce (kikkoman), lemon juice and crushed garlic overnight. Then I quick fry it over high heat in garlic flavored olive oil and serve it over jasmine rice. YUMMY :~)

I make Jambalaya in a Rice Cooker - 20 minutes and a few ingredients - perfect! Being a displaced Cajun, it was a good night (Mardi Gras) to have a little 'home'. Threw a chicken in the oven to bake - made a great dinner and we have a few servings for leftovers as well.

I made chicken rollups stuffed with stuffing and sprinkled with blackpepper. The remainder of the extra stuffing I put along both sides of pan. I then topped just the chicken with cream of mushroom soup. Vegetable was whole string beans. Family seemed to enjoy.

I made a huge bowl of green salad so I wouldn't have to make it everynight. We had a medium sized baked potato, peas and steak done in the broiler. I microwave the peas and that saves on a seperate dish when it comes to clean up (washing dishes).

We had a quick and simple dinner of Chicken cutlet, Italian style and BBQ green beans, salad and my special recipe for bread pudding. Daughter's in College and comes home early, and very hungry!!I I work early morning hours so I'm home in time to prep. When making a large meal or 2, I usually designate Sunday's. I love to cook I'm Italian, so I suppose it's natural. I alway's experiment in the kitchen. I've come up with some great recipes, and my guniea pigs are my older son and my daughter.......Yay or na! They let me know.......LOL.................

Lots of kids in and out this week. With this being a more 'quiet' kid night I snuck in steak and homefries.

Chicken stir fry with noodles. Stopped at the Asian market on way home. Bought fresh bamboo, sprouts, bok choy, and cooked noodles etc. Cut up some frozen chicken cooked in a little oil and garlic. Then added all kinds of veggies with 2 tablespoon of soy sauce and 1/4 cup of OJ. Cooked 6 mins and supper was done! Have enough uncooked veggies to do again with the beef and pork that I have on hand. The already cooked chow mien noodles speeded up things and made life easier than doing the usual rice.

Simple grilled chicken with steamed greens beans that are sauteed in garlic and oil and a sweet potato on the side. My kids say if we eat any more chicken we are going to grow feathers.

Baked rotini and salad. Simple and easy- DH has hockey tonight.
PS- thanks Jen, all is going well. I had some nausea last week which was no fun- but it seems to be lifting this week. Not too many cravings, just a few food adversions. I have been allowing myself 'extra' desserts, though! (Of course, I've also started back at the gym- I know from experience that if I'm not careful all the extra calories will go to the baby AND to my back end!!)

Last night I saute fresh chicken that had been cut into bit sized pieces and marianted in sweet & sour dressing. As side dishes we had saute fresh green beans and baby carrots along with rice pilaf. This is a very fast and tasty dinner and as far as I can see, very healthy too.

We had Pan Roasted Chicken Breast, Hoppin-John, and Sugar Snap Peas.
The chicken breast had a miso/Old Bay dry rub. The Hoppin-John was field peas with snaps served over steamed rice or mix it up if you please. Steamed sugar snap peas.
This meal was quick and yummy. Hubby loved it!!
