Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.
We will remind you again before the transition occurs but wanted to let you in on the exciting news!!

We had Pan Roasted Chicken Breast, Hoppin-John, and Sugar Snap Peas.
The chicken breast had a miso/Old Bay dry rub. The Hoppin-John was field peas with snaps served over steamed rice or mix it up if you please. Steamed sugar snap peas.
This meal was quick and yummy. Hubby loved it!!

We had crab and corn soup with french bread. It is from the Prime Time Emeril cookbook. And we just used imitation crab.

We had turkey smoked sausage with Knorr/Liptn Red Beans & Rice, along with a salad & Lemon Chalet Creme girl scout cookies for dessert. I sauteed the turkey sausage until tender, added he red beans & rice mix & 2 cups of water, let it simmer covered for 7 minutes & dinner was done & delicious!

We had Smoked Porkchops in a light barbecue sauce, corn-on-the-cob, baked beans, salad, rolls and banana pudding. It was yummy and quick. Smoked chops are already almost done and I put the beans on before putting the chops in the oven. Chops in, corn on, toss the salad when you prepare the rolls. And I had my middle girl make the banana pudding she loves to cook desserts.

We had pecan/honey crusted pork chops and asparagus. Yummy! I use the Cabela's Open Season Pecan Honey Seasoning and add chopped pecans. First mix together a little beer and a little honey (mixture should be on the thick side). Dip pork chops in the beer mixture, then coat in the seasoning mixture. Fry pork chops in a little olive oil (3 minutes each side) then put the whole pan in the oven at 350 degrees for 15 minutes. Serve steamed asparagus on the side. (the pork chop recipe is on the Cabela's Seasoning jar label)

One of the best investments I ever made is Panini grill. It has paid for itself many times over ( $25.00 on Anazon.com) Lastnight we had french country bread ( you need a bread that can withstand the pressure of the Panini grill top and not turn into mush). This bread was sliced about 3/8 of an thick . I make a layer on each slice of bread .The first layer was slices swiss cheese,then thinly sliced genoa salami , ham, corned beef ,coleslaw and 1000 island dessing. The coleslaw and 1000 island dressing go only on one slice .I put the sandwich together so that the cole slaw and dressing are in the middle between slices of meat and not directly on the surface of the bread, ( which is why I make a layer on each slice ) put two of the layered slices of bread together and put on the preheated Panain grill and grill until there are browm grill marks on the bread, it should be dry and slightly toasted looking on the surface of the bread. Typically 10 to 15 minutes. No need to turn them over. It was accompied by sweet pickle slices . You will get a pleaseing crunch when you bite into this delicious sandwich and it will fill up even the hungriest man! Really good on a cold winters night .

we had my emergency meal. When I make lasagnas, I mkaea bunch and give them to friends, freeze a couple. Then I take the leftover noodles, cut them up, add the leftover ricotta and mozzarella, toss it in a bag and freeze it. On a desperate day I toss it in the crockpot around 1:00 and cover it with whatever jarred sauce was BOGO. Its melty and cheezy by the time we come in from practice and it smells fabulous!
My other desperation dinner is frozen boneless skinless chicken. Pour a package of taco seasoning on it and cook on low for 6-8 hours. Shred it and it goes into tacos, burritos and salads. When you get sick of it, make enchiladas and freeze them. Cook once eat twice...

I marinated boneless/skinless breasts in Tuscan House dressing; grilled the breasts on my George Foreman for 9 minutes, topped with mild giardinare and served on whole grain bun.

I already posted last night's dinner. Tonight, the little guy's dinner is being handled by his dad, so I'm probably going to just have a grilled cheese and tomato soup.

jen...not for nothing but... I canNOT tell you how much walking, be it with a dog (which is a GRAND incentive) or just walking by yourself does to drop those pounds and tone up stuff you didn't even know you had! GREAT exercise without even knowing it's helping. Here's a secret tip, take 2 cans of vegetables w/you, one in each hand and swing those arms as you walk. GREAT exercise, don't even realize you are doing it. I always walk after dusk so no one would notice the cans of peas in my hands, but that's just me.... 14+ and counting, best of luck.
Oh, on topic... last night was a roasted pork loin w/onions and apples and carrots w/mashed potatoes OF COURSE. Pickled beets for me for that cold, crunchy contrast and some "whack on the counter edge rolls". Oh, and canned smal, sweet peas. Another must, much like the potatoes & beets. Some things are just rules, not to be messed with

thanks again to tamire, 1hotbiscuit, mustangsally and st.b... it really hasnt been that hard. i still eat pretty much the same, i just find ways to cut fat, sugar, and REALLY cut down eating out...doing 80 crunches 5x/week, and some cardio. i bought a dvd, called 'the firm'...but the trainer annoys me so badly, i can only do so much of it...other than that, just walking my dogs everyday helps with that...
1hotbiscuit, do what you wanna do...who cares!!! as long as your happy. same to you mustang sally!!!
st.b... hows ms. preggers doing?? hope that youre feeling well and NOT fighting the craves!!! cause this is when you NEED and DESERVE it!!! i hope youre doing well..
back on topic, you all know what i had to eat last night...since its so late, may just have a cup of yogurt...not in the mood to eat... just wanted to say thanks!! love and hugs to you all!!

p.s biscuit, i FINALLY found the boca shroom burgers, but, not swiss, but mozz... wonder if its the same??? will try tomorrow...

I made a greek style spanakopita with feta, spinach, broccoli, red onion, lots of dill and a bit of hot italian sausage with a layered phyllo crust. Baked in in a 13x9 pan and cut into servings after baking.

Breaded chicken cutlets, asparagus, beets, oven roasted garlic potatoes and corn bread (new recipe...not a keeper...we weren't crazy about it). Peanut butter cookies with a cup of tea for dessert, later in the evening.
