thanks for the info st.b...

last night was grilled chicken salad with butter lettuce, corn and cukes... one thing i have not given up id rench dressing... i just dont keep it in the house. only have it at the pub...

to answer your question blessedmommy :

campfire sweet potatoes are peeled, thickly sliced sweet potatoes (or regular) placed on heavy duty alum. foil, splash of evoo, salt & pepper, folded up into a packet with a few slashes to release steam. I put them on the grill to get started cooking before the meat. When we're camping, I put them on a grate over the campfire - hence the name!

Last night was beef pot roast with potatoes and carrots, garlic bread and tossed salad. The neighbor came over with one of my favorite Indian dishes - paneer with chiles, onions, sweet peppers, and spinach. Delicious surprise!

Congrats on your anniversary. Yesterday was my birthday, so we had MY favorite meal of steak, grilled veggies and salad. My husband brought me a small box of Godiva chocolates, so I had a couple of those for dessert. YUM!

I baked some boneless,skinnless chicken breasts that I marinated in some light italian dressing, hashbrown casserole, and green beans with a dash or 2 of italian dressing.

I also found some excellent strawberries in the store, big, red, and very sweet, so I had strawberries and whipped cream.

Jen, is this the same patty to which you refer?

If so, have not fear. There is nothing crazy or unusual (or even unnatural for that matter) in there- despite the some of the funny names.
TVP (texturized vegetable protein) is basically just soy beans that they process to make it taste and "act" like meat. It is often mixed into meat in kitchens to "stretch" it and add moisture. It's actually quite healthy. All the other things are basically plant or milk based binders to hold it all together.
So no worries- and keep up the good work. :)

If however, you want something even more "natural", look for Dr. Praeger's brand of veggie burgers. (http://www.drpraegers.com/products/products.aspx?SID=1&Product_ID=127&Category_ID=9) They're made with 'normal' sounding ingredients- and you can actually see the veggie pieces. They taste good, too! (Trader Joe's carries them).

BTW- last night was veggie, bean and beef burritos (leftovers for lunch). Tonight will likely be left over jerk pork.

The black bean patties are from Morning Star? I *think* our WalMart carries them but my normal grocery doesn't :(. I'll give them a try next time I have to go to Wallyworld.

pershingsmom, try and rub your hands on a stainless steel sink or faucet. It will take the smell off your hands. I do this when slicing onions all the time.

Last night was pork chops, corn, and biscuits. Tonight will be texas caviar soup and either grilled cheese or corn bread muffins. Haven't really decided...

Jen, have you tried the Boca Mushroom & Swiss "burgers" with a little pepper they are pretty good! Had one for lunch today with some steamed carrots, glass of tomato juice and am going to slice an apple in a minute.

We had homemade chicken curry (from scratch, with mustard seeds, and fenugreek seeds, and all kinds of other seeds that I only have for THAT!!!), and some brown rice cooked in coconut milk and water, and cucumber raita VERY GOOD!!! although I can still smell all the seeds and seasonings in my hands at work!!! but it was WORTH IT!!!!!

Last night we had a one-dish stir fry of chicken and veggies with a salad. Tonight is steaks, salad and some kind of side. Today is my birthday and I opted for a nice piece of meat to grill at home rather than dinner out.

Last night was the taco ring which was made out of crescent rolls hamburger cheese and seasoning. Baked and then topped with lettuce onions tomatoes and salsa. It was yummy..

I think tonight I am gonna uncover the grill and grill up some ribeye steaks and serve fried green tomatoes and hush puppies on the side

Hello Eemma,

I am so sorry to hear what you are going through with your family, I hope that your Mom and Sister will be up and around soon. The year will get better for you, you are getting your bumbs out of the way now.

I have to say that 8 and half weeks went by very fast with him gone, he is so very happy that he has his cell phone back!! I think he was happier with that, then with us coming out!!:^O
He will be back in FL in 2 weeks, but still 15 hrs. away from us! ROAD TRIP!!!:)

Today I am going to try to do a Sweet and Sour Chicken in the slow cooker!!
